My nephew gave me a darling Starbuck’s mug from Oklahoma, where
he is now residing, and I knew it would be the perfect size for this salad in a
cup meal.
What is salad in a cup? Pretty much anything you want to add to
it. I had it as a quickie lunch the other day when I was out and decided I had to copy it.
To make at home, I
used whatever veggies and such I had on hand in the refrigerator. I almost always have cooked chicken, but I'm sure you could use any other meat you desire or cheese or tofu.
For the salsa, I purchased some really delicious tomatoes. You can make it ahead of time. It will keep for at least a week. FYI, you’ll have so much salsa left over if you only make one salad that
you’ll want to buy a bag of Doritos to enjoy the rest of it.
Salsa Fresca
(yield 2 cups)
4 ripe tomatoes, chopped
1/4 red onion, chopped
1 jalapeno, minced
8 parsley sprigs, minced
1 garlic clove, minced
Juice of 1 lime (*see note by picture below)
1/4 cup olive oil
1/2 teaspoon salt, more if desired
Salad in a Cup
(serves 1)
1 chicken thigh or breast, cooked, chopped
paprika
4-6 slices cucumber, quartered (you may keep or remove the skin)
2 tablespoons garbanzo beans or kidney beans or black beans
2 tablespoons diced jicama, if desired
4-6 baby tomatoes, sliced in half
1/3 avocado, diced
2-4 tablespoons salsa fresca
1 mug
Dice the chicken and dust with paprika. If the chicken is cold,
heat in microwave for 15-20 seconds.
Prepare the vegetables and beans.
Layer the chicken, cucumber, beans, jicama, tomatoes and avocado
in the mug. Top with 2-4 tablespoons salsa fresca.
Enjoy.
Of course, this could be prepared and set atop a bed of lettuce
on a plate.
My limes were a little hard to squeeze, so I used a garlic press to help me out! Ha! |
