My New Working Lunch



If you go to pot lucks a lot, you have probably encountered this recipe before. It's so simple, it makes a ton, and it's at least partly healthy. A new friend makes it often and started bringing it to me for lunch because she always had so much left over. Now I make it on Sundays for the week ahead. It takes only minutes to scoop it into a bowl and get back to work!

In addition, I had noticed that when I eat a sandwich for lunch, I suffer from the desire for a post-lunch nap. All these veggies keep me up and going!

I have made it several ways now. The original recipe is simply broccoli, cauliflower, onion, and mayonnaise. Simple enough. I happened to have leftover bacon one day and added that. Oh my goodness! Now it's my favorite. I have to admit that if I don't have bacon on hand, I like to add a can of kidney beans. The color is nice and it adds a different texture, too.

I'm not a broccoli hater, so I peel the stem and chop it into the salad as well. I'm going to give the recipe for half of the salad. Unless you're having a big party, you really don't need the whole thing.

Broccoli and Cauliflower Salad

1 head of broccoli
1/2 head of cauliflower
1/2 onion (red is prettiest, but any onion will do)
6 strips of bacon
mayonnaise to taste

Wash the broccoli and cauliflower. Cook the bacon. Cut or snap the broccoli and cauliflower into bite-sized pieces. Place in a large bowl. Chop the onion and add to the bowl. Slice the bacon into bite-sized pieces and place in the bowl. Using a soup spoon, add one or two spoonfuls of mayonnaise and toss well. Add more according to your taste.



Throw everything into a large bowl.
Lunch is ready!

  1. And for those who can't face the idea of raw cauliflower and broccoli, you can always blanch or cook them first.
