Put a Little South in Your Mouth #SourCreamMuffins #DeniseSwansonAuthor

You all may have noticed that I usually post main course recipes. I used to love to bake, but when I changed my cooking philosophy to HIT-- Healthy, Inexpensive, Tasty--I pretty much stopped making baked goods. But last month, I attended my Alpha Sigma Alpha Chicago West Alumnae Chapter's Put a Little South in Your Mouth potluck dinner and I was asked to make sour cream muffins. These are neither healthy nor inexpensive, but they taste wonderful!

Preheat oven to 350 degrees.


They only take three ingredients:
2 c. self-rising flour
2 sticks of melted butter
1/2 pint of sour cream

Combine melted butter and sour cream, then slowly add four. Mix until smooth. I used my hand mixer, but my stand mixer would have been soooo much better.

Spoon into muffin pan--no need to grease or use paper cups as these have enough butter to come right out.

Place on middle rack in oven and bake for 20-30 minutes. They will not look brown on top so use a toothpick.



Serve warm with your favorite jam, jelly, or honey.

    1. I made them for a dinner party so didn't have any left. My guess would be that after freezing and thawing they would be tough.
