Orange Creamsicle #Cake for #Easter #Recipe @PegCochran

I LOVED creamsicles when I was a kid--the way the vanilla and orange flavors blended together as the ice cream melted--so when I saw this recipe I knew I had to try it.  I don't make a lot of cakes because hubby and I are both trying to watch our sugar intake so it didn't bother me that this recipe started out with a box mix.  No purist here!  Plus it's easy to put together if you're pressed for time.  And who isn't?

I thought it was the perfect dessert to take for Easter.  We're going to my older daughter's this year--she's hosting her first holiday dinner!

 


Cake:

1 box white cake mix
1 cup orange juice
6 ounces plain Greek yogurt

Glaze:

1 1/2 cups confectioners sugar (sift it to remove any lumps)
3 to 4 tablespoons of milk or water
2 teaspoons vanilla extract
1 orange (optional)

Preheat oven to 350 degrees.

Spray a bundt pan with cooking spray.

Combine orange juice and cake mix and stir together until combined.



Add Greek yogurt and stir again until well combined.



Pour into prepared bundt pan and bake 25 to 30 minutes or until a toothpick inserted comes out clean.



Cool cake then unmold onto a plate.



To make glaze:

Combine all the ingredients and stir until liquid.

Drizzle over cake. If desired sprinkle grated orange peel over cake.

    1. Libby,I'm loving writing the Murder, She Reported series. I'm working on book #2 right now--it takes place at the time of the "Long Island Express," the hurricane that tore up the east coast on September 21, 1938.
