Desperate for Brownies



My lawn guys cut my Internet connection in two places on Saturday. Yup. It's been that kind of weekend. Happily, they were able to splice it together so that it worked! The lesson there is not to believe it when someone says the Internet cable cannot be spliced. It can! However, then the guy at my Internet Service provider said I'd better wrap them with tape in case it rained. So I did. And it didn't work. I lost the signal!

Did I mention that I have edits due to a new editor on Monday?

So I unwrapped the one I suspected was the culprit and the signal came back. Yay! I plopped an old kitty litter box over it to keep the rain off, but I knew that if it rained hard the rain would run along the ground under the box and short out the cable.

So all weekend long, it's been that way. Terrible thing, good thing. Terrible thing, good thing. You know what I need? No, not booze. Chocolate!

But I looked in the pantry for unsweetened baking chocolate and, eeek! I'm out. I modified this recipe to use semi-sweet chocolate because, well, I was pretty desperate.

And now, back to those edits. Crossing my fingers I'll still have an Internet connection on Monday morning when you're reading this!

Semi-Sweet Chocolate Brownies

3 ounces (blocks/squares) semi-sweet baking chocolate
1 stick (1/2 cup) butter, room temperature
2/3 cup sugar
2 eggs
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
2 tablespoons boiling water
3/4 cup flour

Preheat oven and grease an 8x8 inch baking pan.

Melt the chocolate in the microwave in 30 second bursts. Stir after each burst, because they'll maintain their shape. Set aside.

Cream the butter with the sugar. Beat in the eggs. Beat in the baking powder, salt, and vanilla. Beat in the chocolate and the boiling water, and finally, the flour.

Bake 25-30 minutes.

  4. Yes, I love the picture of the empty plate! And I'm sure most of us live in terror of losing that fragile Internet connection--our lifeline to the world.

  5. Necessity is the mother of invention.
    And sloppy lawn guys are just plain "a mother"! (If you get my drift)

    What about a smaller waterproof container under the splice with a slightly larger one on top? The top one prevents rain falling in and the bottom one prevents ground wetness from messing about.

  7. Brownies are my weakness! I love them and that is what my plate looks like after I make them.
    But on another topic, I am 100 pages into DIVA STEALS A CHOCOLATE KISS and I love it! I am never disappointed and I have the GHOST AND MRS MEWER to read this Fall. I can't wait to find out what Holly, Trixie and Twinkletoes are up to.
