These cookies were submitted by Lynn in Texas and my husband was in heaven the day I baked them. Soft, chocolate mint with an almond crunch? These are sure to be a new favorite in this household and in yours too for years to come. My only challenge was that I couldn't find the bag of Andes mints and I went to 2 stores. Never fear though. You can buy (2) 4.7 ounce boxes of Andes mint candies, unwrap them, put them in the freezer , and then pound them into chips just before you mix them into the dough.
1/2 teaspoon salt
I've got to try these this year....I've got the mints in the fridge!
ReplyDeleteoff to move them to the freezer
These look delicious.
ReplyDeleteI'm constantly amazed by the clever things people do. Who would think of freezing mints and then putting them into cookies? So clever!

Jenn, aren't these tasty? I'm so glad that y'all enjoyed these cookies and just thrilled to win the cookie cutters. (Email sent)
ReplyDeleteBTW, I thought it was ingenious of you to use the regular candies, freeze and whack 'em. Thanks for that lil tip! I bought a bag of the Andes chips at our local WalMart about 2 weeks go and there were plenty at the time. Hoping not to step foot back in that place til after the holidays (lol) but I know I'll probably *need* something and will have to fight the masses there!
Thanks again for helping with the contest! It's been a lot of fun!
I made these again for the Barnes and Noble booksellers where I signed today. They raved about them! Thanks, Lynn!
ReplyDeleteMissed part where mints were added to dough. When? Thanks.
ReplyDeleteSherry, where it says "fold in chips and nuts" means the Andes choc. mint chips, just before dropping onto baking sheet. Hope that helps!
