This soup is full of flavor and all the goodness (and vitamins!) of fall vegetables. It’s thick and comforting, and just what the body needs in winter. We loved the chunky texture of soft lentils and veggies, though if you prefer a creamier soup, use a blender or immersion blender before adding the spinach. And it’s great for vegetarians, vegans, and those who eat gluten-free.
Like most of us, I suspect, I don’t usually make my own vegetable stock, buying it in cartons. Those tend to be 32 ounces or 4 cups, so for this, I used one carton and 2 cups of water, not wanting to leave half a box in the fridge. With so many veggies in the mix, I didn’t think we lost any flavor through the substitution.
In my Spice Shop mysteries, Pepper often says smoked paprika may be her favorite spice, “but don’t tell the others.” The generous amount used here adds to the lovely red color of the lentils, and gives a smoky flavor I love. If you’re worried about heat, make sure you’re using smoked sweet paprika; the amount of cumin is enough for flavor without heat.
The lemon adds a bit of brightness, but be careful, as it can quickly overwhelm other flavors. A few drops in each bowl is plenty. The zest is a delight.
Serve with cheesy bread and enjoy!
Red Lentil and Spinach Soup
2 tablespoons olive oil
3 garlic cloves, minced
1 teaspoon grated ginger, fresh or jarred
1 cup diced onion
1/2 cup diced celery (2 stalks)
1 cup diced carrot (about 2 carrots, depending on size)
1 tablespoon sweet smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 1/4 cup diced white or yellow potato (roughly one large)
1 1/2 cups red lentils
6 cups low-sodium vegetable stock
4 cups baby spinach
1 lemon zested and cut into wedges
Add the onion and celery and sauté an additional 4-5 minutes, until the onions become translucent.
Add the potatoes and lentils, and stir well to coat with the spices.
Spoon into bowls. Add a quick squeeze of lemon and top with about ½ teaspoon of lemon zest.
Serves 6.

That looks good Leslie! It's great to have a recipe for which I might already have the ingredients!
ReplyDeleteLOL -- always a plus!
DeleteThank you for the Red Lentil and Spinach Soup recipe! It is definitely turning to soup weather. While our temperature seems to be going up and down, soup is still a good option for a tasty supper here. Hubby's potato soup is still my favorite, but enjoy trying others to see if it can best it.

Thanks, Kay! Just tell him "honey, you know I love it, but we can't eat the same thing every night -- and besides, it has a potato in it!" Enjoy!
DeleteThis sounds so good, and perfect for the lunch with friends I am hosting next week!
ReplyDeleteOh, friends lunch -- always a treat! Enjoy!
DeleteI just made lentil soup last week when we finally had some cooler weather and some rain! I love cumin and tend to go heavy with seasoning with it, but I'll have to try your addition of smoked paprika next time. Thanks for the recipe, Leslie!
ReplyDeleteMy pleasure, Kim! I love the smokiness of the paprika, and boy, did the flavors settle in nicely, making the leftovers even better!
DeleteThanks for this delicious recipe, Leslie! In my neck of the woods it is not yet cold, but we had a freezing low of 49 degrees yesterday morning...can you believe? :-) Soup is always welcomed, and your recipe is so healthy. I have not seen red lentils in a long while at the grocery store, but I will be on the hunt for them. Meantime we have the regular lentils in case I don't find them. I do have to nix the onions because of my allergy, but otherwise it will be grand to try this soup! Many times we have soup in the summer, which is a tradition that I inherited from my father who often shared that a meal without soup was incomplete. Thanks again for the recipe, which we will surely enjoy!
ReplyDeleteEnjoy, Luis!
DeleteYes, definitely soup weather! My favorite soups are Navy Bean, New England Clam Chowder and Split Pea. johnlong83@rocketmail.com
ReplyDeleteAll classics, always in good taste!

ReplyDeleteOh, another wonderful soup! Isn't it great to have so many to choose from?
DeleteLeslie, this looks like a great soup for a cold day. I like the combination of lentils and spinach. Definitely going to try this!
ReplyDeleteIt's so warm and satisfying -- enjoy!
DeleteThis sounds like a winner! Red lentils are so convenient and tasty.
ReplyDeleteLiving in south Florida means any day with A/C (which means everyday!) is good for soup.
Thanks, Libby! Red lentils have never been a staple for us, but they are now! And LOL about the A/C -- Northern girl that I am, I'd look at warm weather as salad days!
DeleteRegardless of temps, soup is always welcome! And this looks like it will be a welcome addition to the rotation. All I need is red lentils to go with the brown and green ones I usually have. Thanks!
ReplyDeleteThe red lentils -- plus the paprika -- give this soup such a lovely color. Enjoy!
