In the Tea by The Sea series, not only does pastry-chef Lily Roberts work hard in Tea by the Sea, her Cape Cod afternoon tea room, but she also makes the breakfasts at Victoria-on-Sea, her grandmother’s B&B.
Muffins are always popular
at the B&B and Lily can easily whip up extra batches when she has time and
freeze them until needed. Sometimes the extra
baking comes in handy when the police pay a call.
This recipe is one of
the ones included in the latest book in the series, Bubble, Bubble Tea & Trouble.
Walnuts can be omitted if you’re baking for someone who might be allergic.

These muffins sound delicious, Vicki! I love baking muffins to keep in the freezer for on-the-go breakfasts or snacks and these will make for a nice change from my usual flavors. Thanks for sharing!
ReplyDeleteLove carrot cake so I will like these carrot and walnut muffins. Thank you for the recipe. Deborah
ReplyDeleteThank you so much for the Muffins with Carrot, Oats, and Walnuts recipe! Sounds both delicious and easy - a fabulous combination. At first I thought it would be easy to make half a recipe for just the two of us. However, I instantly ditched that idea. I can see these being perfect to freeze and pull out two at a time. Eat now and then again later is also a fabulous combination. 😉

They freeze very well. That's what I do, and then I eat one a day.
