An interesting twist on meatballs for someone who’s looking for something different for dinner one night. I served this with rice, but noodles should work as well.
They were tasty and I’d encourage you to give
it a try, if you like, but as for me, I think I prefer my meatballs in proper
tomato sauce over pasta.
Coconut Curry Meatballs
Ingredients:
2/3 cup bread crumbs
1 egg
2 cloves garlic, minced
½ tsp each salt and pepper
1 lb lean ground beef
2 tbsp dried coriander
2 tbsp ginger, minced
1 tbsp oil
1 onion finely chopped
1 400 ml can coconut milk
1 cup chicken stock
2 tbsp lime juice
1 sweet red pepper, chopped
1 tbsp red curry paste
Directions:
For the meatballs. In a bowl combine bread crumbs, egg, half the
garlic, salt and pepper, beef, coriander and ginger. Add ½ cup water and mix
until combined.
Form into balls. Heat oil in saucepan and
add meatballs. Cook until browned. Transfer cooked meatballs to a plate.
Sauce: Add onion and remaining garlic to pan
and sauté over medium heat, stirring often, for about 3 minutes. Add coconut milk, stock, lime juice, red
pepper, and curry paste. Simmer for about 25 minutes.
Add meatballs to the sauce and continue to
simmer for another 20 minutes. Serve over rice or noodles.

Thank you for the Coconut Curry Meatballs recipe. After you get over the idea of what the standard meatballs are, I think it would be very tasty. I think I'd rather have it over noodles too.

ReplyDeleteThanks for the coconut curry meatball recipe, Vicki! It sounds like a chicken Thai dish I used to make and that we loved, except using meatballs. I always keep a stash of meatballs in the freezer for quick meals, but change up the sauce so I'll have to give this a try!

ReplyDeleteI do not. I don't eat bacon, so that is not in my repertoire. Nor, come to think of it, do I ever make hash browns. Sorry.

ReplyDeleteThank you for this recipe, Vicki! I have never tried to make anything like this coconut curry dish, but it looks good. In our house, being of Scandinavian descent, our meatballs are usually in a cream gravy. Now that I think of it, I don't think I've ever made Italian meatballs in red sauce! I've eaten them, of course, and love them. I guess I now have two different types of meatball dishes to make, lol.

DeleteI love curry and these sound delicious! After reading the comments, I am thinking we need to do a meatball variety buffet for a big family/friends dinner. I am sure the grandkids would all love it! Thanks for the recipe and the inspiration.
ReplyDeleteIt’s nice to know what doesn’t work as well as the successes. It provides more information when you aren’t sure about how a less common ingredient would taste, especially if you haven’t used it before
