VMBURNS: It snowed in Georgia!!! It's winter and time to dig out my crockpot. I LOVE my crockpot. I had MOST of the ingredients, except for the most important one, the chicken. By the time my groceries were delivered, I didn't have time for the slow cooker. My mom used to make Chicken and Noodles on the stove and I loved it. Sadly, she left no written recipes, so I've had to try to figure out how to make this by myself. This version doesn't taste like my mom's but it's still tasty.
CHICKEN AND NOODLES
INGREDIENTS
- 1 lb boneless skinless chicken thighs,
- 2 Tablespoons olive oil
- 2 Tablespoons butter
- 1 1/2 Cups Carrots, sliced
- 1 1/2 Cups celery, sliced
- 1 onion, diced
- 8 Cups chicken broth
- 2 Tablespoons chicken bouillon powder or cubes
- 1 bay leaf
- 1Teaspoon oregano, paprika, cumin, basil, thyme, sage, creole seasoning
- 1 /4 Teaspoon red pepper flakes (optional)
- 1/3 Cup flour
- 2 Cups heavy cream or half and half
- 2 Tablespoons cornstarch
- 1 Cup Egg noodles
- 1/3 Cup parmesan (optional)
- INSTRUCTIONS
- Sprinkle in the flour. Stir for approximately 2 minutes so the flour doesn't burn.

Corn chowder, vegetable beef stew, and chili are our favorites. I also do a lot more baking (don't like to heat up the house in the summer months) and the low humidity is the perfect time for candy making.

DeleteNothing beats a big old pot of vegetable beef soup or homemade chili for me to say "Winter I've got this!" I remember fondly my mom would take the leftover roast from Sunday's dinner and make the most heavenly pot of vegetable beef soup. She would freeze leftover veggies and garden veggies that were too small for a dish for the family that she would add to give it more flavor and not waste anything too. With a pan of cornbread was a delicious and filling meal we all loved. In fact, it seemed that the flavor got even better if there was any leftover for the next day. Hubby and I also love HOT chili. I have to fix it to where I can eat it and then he adds even more heat to his portion.

Vegetable soup sounds wonderful. I haven't made a vegetable soup from scratch, but now I'm thinking I need to give it a try. I love it with a peanut butter and jelly sandwich. Oh, and I like chili, too. Gotta have cornbread with it.
