Asian Chicken Salad #Recipe Peg Cochran/Margaret Loudon

 


My husband gave this salad his highest praise "don't lose this recipe."  Unfortunately, there isn't an actual recipe but fortunately, I have memorialized it here!  There are no quantities listed because you can make this salad as big or small as you want.  All the additions beyond the chicken breast, Cole slaw mix and dressing are optional.  Use your imagination...and what you find in your pantry!

 

Ingredients:

Bag of Cole slaw mix

Cooked and shredded chicken breast 

Cooked and shelled edamame

Canned Mandarin orange slices

Sliced green onions

Sliced almonds

Asian or ginger dressing (homemade or bottled)

Wonton strips

 

In a large bowl layer Cole slaw mix

 


Edamame


 

Shredded chicken


 

Mandarin orange slices and sliced green onions


 

Top with sliced almonds, dressing and wonton strips
