Apples and cinnamon must be the perfect combination, and they work perfectly in these muffins.
Cinnamon Apple Muffins
Ingredients:
2 cups all-purpose flour + 2
teaspoons for coating apples
1½ teaspoons baking powder
½ teaspoon salt
2 teaspoons ground
cinnamon + 1/2 teaspoon for coating apples
2 cups finely diced apples
½ cup unsalted butter, room
temperature
1 cup granulated sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
½ cup milk
For the Topping:
2 tbsp sugar
1 tsp ground cinnamon
Instructions:
Preheat oven to 375º F. Prepare muffin tins
Sift together flour, baking powder, salt,
and cinnamon in a medium bowl. Set aside.
Cream together butter and sugar until
lightened in color, about 3 minutes. Add an egg, one at a time, taking care to
fully incorporate before adding the other. Mix in vanilla.
Gently fold in flour mixture, alternating
with milk. Stir until just combined.
Toss together diced apples and 2 teaspoons
of flour to coat apples in a separate bowl.
Fold in diced apples and scoop mixture into
prepared muffin tins, filling about 2/3 to 3/4 full.
Sprinkle lightly with topping
Bake until a toothpick or skewer inserted
in the middle comes out clean, about 30 minutes.

Cinnamon Apple muffins sounds so good yesterday my hubby made me carrot muffins that had creme cheese in the middle and they were just out of the oven when I brought the pups back inside from doing their duty. They were so good and in 22 years of being married and knowing him never has he done this for me so now I have a new recipe to leave on his side of the kitchen counter,.Thank you for sharing peggy clayton ptclayton2 @aol.com

ReplyDeleteI have a question. You list in the ingredients "+ 1/2 teaspoon for coating apples", but you don't tell when to add the extra cinnamon. Along with the flour on the apples?
