The wind is roaring and the snow is blowing but we have plates of gingerbread pancakes with maple syrup for breakfast. They’re warm and spicy and feel like a special treat. Special or not, these pancakes are easy to make and always earn smiles and thanks. Sometimes I make small cakes, sometimes big. It doesn’t matter - they’re all good. They have a nice cakey consistency. If you have leftovers, try them spread with peanut butter. I bet they’d also be good with lemon curd or whipped cream studded with crystalized ginger.
Gingerbread
Pancakes
Ingredients
3 cups all-purpose flour (or a combination of white and whole wheat)
1 cup brown sugar (dark or light)
1 tablespoon baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
½ cup water
½ cup coffee, cold or room temperature
4 large eggs
½ cup (1 stick) unsalted butter, melted and cooled
¼ cup lemon juice
Vegetable oil for skillet or griddle
Directions
In a large bowl, whisk brown sugar into melted, cooled butter.
Slowly whisk in coffee, water, and lemon juice. Beat in eggs one at a time.
In
a medium bowl, whisk together flour, baking powder, baking soda, salt, and
spices.
Whisk
flour mixture into butter mixture, mixing until just combined. Batter will be
thick.
Brush
heated skittle or griddle with vegetable oil and cook big or small pancakes as
you would any other pancake.
