Apple Coffee Cake @MaddieDayAuthor #Thanksgiving #giveaway

MADDIE DAY here, kicking off our two weeks of Thanksgiving recipes. I adore Thanksgiving. It's a holiday with great food and loved ones and no commercialism. What's not to love?

Many of us host family for several days around the feast day, or are hosted by someone else. So I thought I'd bring you an easy and delicious fall-flavored coffee cake. You can make it the night before to serve to your guests for breakfast or bring it as an offering to your own host wherever you're staying.

Apple Coffee Cake

Ingredients



Cake

1/2 cup butter, softened

1 cup white sugar

2 eggs room temperature

1 teaspoon vanilla

2 cups unbleached white flour

1 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon salt

1 cup sour cream

2 cups diced apples

Topping

3/4 cup chopped walnuts

1 1/2 teaspoons cinnamon

3/4 cup brown sugar (dark or light)

3 tablespoons softened butter

 

Instructions

Preheat oven to 350 degrees. Grease a 13x9 inch pan.

Rub walnuts, cinnamon, brown sugar, and butter together for topping and set aside.

Beat the butter and sugar until well incorporated. Add the eggs and vanilla, and beat until light and fluffy.



Sift together the flour, baking soda, baking powder, and salt. Add the dry ingredients in three parts alternately with the sour cream in two parts, finishing with the dry ingredients.



Stir in the diced apples. 



Spread the batter evenly into your prepared pan. 



Sprinkle the topping over top.



Bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted comes out clean. 



Cool on a wire rack until cool enough to serve. Delicious with coffee or tea for your Thanksgiving breakfast.

  2. My favorite coffee cake has to be my Mom's Hungarian Coffee Cake. Loved it so much it was what I always asked for on my birthday. it's kind of a cross between sticky buns and cinnamon rolls. It was yeasty little balls rolled in butter and then mixture of cinnamon, sugar and chopped pecans. Then layered in a angel food cake pan and more goodies put on top. Smelled marvelous and was delicious warm, room temperature, plain or with ice cream.

    Thanksgiving morning was light breakfast or nothing at all. Between sampling to make sure everything was just right and the big meal usually around 4ish, you didn't want to fill up your belly with a big breakfast.

  3. My favorite is also an apple coffee cake, a recipe my mom got from someone years ago. For Thanksgiving breakfast we might have a little something to hold over or nothing, it all depends on when we plan the meal. With most of us working holidays, our meal might be suppertime or a different day entirely.

  5. We all have an early Thanksgiving meal and do a light breakfast on Friday after. I have to go with whatever coffeecake flavor turns me on at the time with lots of cinnamon.

  8. welcome and thanks for sharing this wonderful looking recipe. our family has loved coffee cake. I would make it for Saturday mornings. of course we had two special coffee cakes that we would make (Bisquick - cinnamon sugar and one with pie filling) to this day both kids still make these on thanksgiving day and christmas. when they were growing up I would make it for a brunch on thanksgiving day. and for christmas eve brunch when they started showing interest in cooking themselves, they took over this tradition.

  12. Thanks for this recipe, it sounds delicious! My favorite coffee cake is cinnamon streusel with a crumble topping. As for Thanksgiving, we always eat our big meal as a late lunch and snack the rest of the day.

This recipe, no surprise, is a MUST bake...one of all the scrumptious recipes you have shared :-) We eat coffee cake often, but not for Christmas...we bake cinnamon rolls for December 25 to eat in between opening presents...we'll have to start a new tradition and make your Apple Coffee Cake. Our grandkids will really enjoy eating this cake. Thank you for your generosity in gifting us readers with so much fun...both in your books as well as your recipes!!!   14. My favorite coffee cake is called St. James coffee cake. My Dad used to make all the time. It was from a church cookbook and my Sister still makes it once in awhile. It would be great for Thanksgiving morning.

  24. My favorite is Apple Cinnamon coffee cake! I’ll eat it most any time of the day or night! I do also like the traditional coffee cake with the brown sugar/ cinnamon crumbles on top!
