MEATLOAF #recipe @vmburns #Giveaway

 VMBURNS: When I'm sad, depressed, bored, lonely, whatever, there are certain foods that I crave - comfort foods. I read an article once that indicated there was something in chicken soup, that helped people with colds. I'm sure the medical doctors and scientist would scoff at that. However, when I have a cold, I pull out cans of Chicken Noodle Soup (yes, cans. Don't judge). When I'm in need of comfort, I want meatloaf, macaroni and cheese, or ice cream. So, recently when I was feeling a bit overwhelmed, I made a meatloaf. It hit the spot.




MEATLOAF




INGREDIENTS

    • 2 lbs ground beef
    • 1 Envelope Lipton Onion Soup Mix
    • 2 eggs
    • 1 cup bread crumbs
    • 3/4 cup milk
    • 1/3 cup ketchup
    • 1 Green bell pepper, cored, seeded, and chopped
    • 1/2 teaspoon ground black pepper
    • 1/2 Teaspoon crushed red pepper flakes

  • GLAZE (optional)
  • 1 Cup Ketchup
  • 1/4  Cup Brown sugar
  • 1/2 Teaspoon Ground mustard

    • INSTRUCTIONS
      1. Preheat the oven to 350 degrees F. 
      2. Mix the soup mix, eggs, milk, pepper flakes, black pepper, and ketchup in a large bowl until combined.
      3. Add the ground beef, bell pepper, and breadcrumbs and mix until just combined.
      4. Shape the meat mixture into a loaf and place it in a loaf pan.

      5. Bake for 1 hour and 15 minutes or until cooked through.
      6. Place ketchup, brown sugar, and ground mustard in a small saucepan. Warm over medium heat, and stir until the sugar dissolves.

      7. Brush the glaze over the meatloaf, slice, and serve.

  10. I'm curious about the recipe. In the photo of ingredients you show an onion and in the close up picture of the mixture there appears to be diced onion, but there is no onion in the ingredients, only onion soup mix.

    1. Libby, You are correct. The recipe did not include onions, but I almost always add onions because my mom always did. She might have been trying to sneak in extra veggies. I realized later that I didn't add it in the list of ingredients. So, I'd say its optional. Great catch. Good luck!

  11. Homemade vegetable beef soup is my go to comfort food of choice, then meatloaf, mashed potatoes, mac and cheese...mostly bring on the starches! Have the meat thawing in the fridge now for a meatloaf, mostly because I had all the ingredients and don't have to go to the grocery store (yay!) makennedyinaz(at)hotmail(dot)com.

  15. The comfort food combination I crave is cookies and milk (or hot cocoa) in cold weather. I reach for my oatmeal raisin recipe because it is easy and uses ingredients that I have on hand. lroth(at)pcext(dot)com
