Shrimp Quesadillas from @MaddieDayAuthor #giveaway

MADDIE DAY here with an easy and delicious recipe for you.


Shrimp Quesadillas

Note: I used flax tortillas because that's what I had in the house, but these are better with flour tortillas. I also didn't have ripe avocados for guacamole, but it's a great additional topping. You can also substitute lobster, chicken, beef, or refried beans for the shrimp.

Ingredients



1 pound frozen shrimp, thawed, shelled, and cut in half

Juice of ½ lime

½ teaspoon chili powder

½ teaspoon powdered cumin

Olive oil

1 small onion, minced

½ red bell pepper, seeded and minced

4 flour tortillas

1 cup grated pepper jack or Monterey Jack cheese

Salsa and sour cream to garnish

 

Directions

Mix lime juice, chili powder, cumin, and oil in a bowl. 



Add prepared shrimp and toss. Refrigerate covered until ready to cook, no more than 30 minutes.



Meanwhile, sauté onion on medium low heat in a tablespoon of oil in a skillet. Add pepper and sauté until softened. Remove to plate.

 


Add 1 tablespoon oil and increase heat to medium high. Drain shrimp and quickly sauté until just past translucence. 


Remove to the vegetable plate.

Add 1 tablespoon oil. On one half of each tortilla, place a few tablespoons (depends on the size of the tortilla) of filling, sprinkle with cheese, and fold over.



Fry two at a time, pressing down with spatula, until lightly browned on one side, then flip and fry other side. (Sorry, forgot to grab a photo of this stage! 

Enjoy with any combination of sour cream, salsa, and guacamole.

  6. No, we don’t do this for Christmas. I love Mexican food, especially quesadillas and burritos with various salsa and cheese sauces. I love guacamole with nachos and salsa. I also love margaritas!

  9. I've never heard of that feast but I don't eat fish or seafood...I love Mexican food though, so if we could have Feast of Mexican Dishes that Don't Include Fish, I'd be mucho happy!

  11. I'd never heard of this feast. I haven't had much for Mexican food since there is only one Mexican restaurant within an hour of me, and some of my family doesn't care for Mexican. I did have enchiladas a couple times when out with friends that I enjoyed. And I love margaritas on a hot day.

  12. Never done the Feast of Seven Fishes at Christmas, but I think it would be fun.

    Love Mexican food and love quesadillas. I laughingly call it my clean out the frig dish as it's an easy and delicious way to use small dabs of ingredients leftover from other dishes. Anything and everything works in a quesadilla.

    My favorite Mexican dish hands down is homemade tamales. Fortunate enough to be an old Army brat raised on a military base surrounded by a vast array of nationalities, my Mom was taught how to make them from a Mexican lady in our neighborhood. Still laugh at how she told Mom she would teach her how to season for us like they do for their babies. Of course, through the years we have raised the heat level in ours too. Don't make them very often because there's just the two of us now, but when I do they bring back fond memories of both Mom and my childhood. I think memories are a lot of what makes certain dishes special to us as well as the taste.

  17. We do not do the Feast of Seven Fishes at Christmas... I usually make a couple of different soups, one is often a fish chowder. I love Mexican food. My current favorite is either shrimp tacos or seafood enchiladas, YUM! The Shrimp Quesadilla looks tasty. Thanks for the idea!   25. We don't do the Seven Fishes at Christmas, that's an Italian tradition. We have Polish sausage and other Polish food for Christmas Eve. My favorite Mexican food is a steak burrito.

    It is impossible for me to choose just one favorite Mexican food! I love refried beans, guacamole, cheese enchiladas, queso, tacos, nachos, sopapillas, and so many other items!

  34. The Feast Of Seven Fishes is news to me! I love beef and cheddar burritos...beef and cheese quesadillas...those super-cheese-full burritos from the mini-mart...all the classics. I think they probably don't have much to do with authentic cuisine....
