Hello from TINA KASHIAN! One of my New Year’s resolutions was to try more vegetable dishes. I love butternut squash, but it is not a favorite in my family. I tried this recipe, and the feta cheese and pine nuts add a lot of flavor. Everyone tried it and enjoyed it. The dish is not hard to make or clean up and I will be cooking this again in the near future. Hope others like it as well.
Ingredients
1 whole butternut squash
Olive oil
2 tablespoons pine nuts
2 teaspoons Italian seasonings
6 ounces crumbled feta cheese
Salt and pepper to taste
Directions
Preheat oven to 350 degrees F. Cut squash in half lengthwise. Scoop out the seeds and stringy bits with a spoon and discard. Score the cut surface of the squash with a criss-cross pattern.
Drizzle olive oil on a pan. Drizzle squash with olive oil. Season with salt, pepper and Italian seasoning. Place squash halves face down. Fill pan with ¼ cup water. This prevents the squash from drying out and will keep it moist. Bake squash for one hour.
Remove from oven. Turn the squash over and test it to be sure it is cooked. You can tell when it is cooked by piercing the flesh with a fork.
Fill the cavity with crumbled feta cheese and pine
nuts. Add some feta and pine nuts to the rest of the top of the squash. Return
to the oven and roast for an additional ten minutes. Remove from oven.
Scoop out some of the flesh and top with more feta as desired. Serve as a side dish or main dish. Enjoy!

DeleteWe really like fresh tossed salads with a lot of lettuce, tomatoes, cucumber, green onion, avocado. For cooked veggies I like to put asparagus, broccoli or cauliflower on a baking sheet - drizzle with olive oil. The sprinkle Parmesan cheese over the top. Roast in hot oven (400 degrees) until done as you like. So easy and so good! You can add more cheese right after taking out of the oven.

You are making me hungry now. I have a salad with dinner almost every day. It's a must! Salads are also something my youngest daughter likes to eat. Your roasted broccoli and cauliflower dish sounds delicious, too.

DeleteI'm not much for eggplant but other than that I've never met a vegetable dish I didn't like. My favorite is stuffed peppers & the peppers can be poblano or any color of bell pepper. My mom made the best bell peppers stuffed with hamburger & rice & simmered in a tomato-based gravy.

DeleteI like Brussels sprouts. I don't know how my DIL makes them but, that is how I like them. She is the main cook at the house. My son cooks if she doesn't. I just show up and eat.
