This is another no-recipe recipe from me in which you can use pretty much anything you have on hand. This is particularly good for using up left-over meat and vegetables. Having three people for dinner but the package contains four pork chops? Save one to make this meal for one. I use both chicken breasts and pork chops to make this, and the quantities are totally adaptable according to how many people you are feeding.
No Recipe Fajita
Ingredients for two fajitas.
One pork chop or small chicken breast,
boneless. Cut into cubes
One onion, chopped
One clove garlic, minced
Handful mushrooms, chopped
Half sweet red pepper
Chopped hot pepper – optional and to taste.

tbsp chilli powder
Salt and pepper
2 tortillas (for one serving)
Sour cream
Half avocado (optional), diced
Chopped tomato or salsa
Directions:
Sauté onions, garlic, and peppers in olive
oil until soft. Add mushrooms. Stir in
chilli powder and season with salt and pepper. Add meat and cook until meat is
cooked through
Warm tortillas one at a time in frying pan and remove to
serving plate. Lightly cover with sour
cream, avocado, chopped tomatoes or salsa, and then add the meat and vegetable
mixture in a line down the middle. Fold bottom of tortilla up, and tuck in
sides to make a package.
