Quick Taco Casserole from @TinaKashian1

Hello from TINA KASHIAN! Mexican food is a favorite in our house. Now that school is back in session and our evenings are full watching high school volleyball and tennis games, I need to cook quick, healthy meals. This taco casserole is an easy one dish dinner, fast to prepare, and pleases a crowd. 

 


Ingredients:

1 pound lean ground beef

8 oz cottage cheese (I used 2 % milkfat)

1 Tbsp taco seasoning

½ cup salsa

1 cup shredded Mexican style cheese

Sour cream (optional)

 

 


Directions:

Preheat over to 375 degrees. I use a cast iron skillet to make this a one dish dinner. Cook the ground beef on medium heat until brown. Drain the grease. 

 


 

Add the cottage cheese, taco seasoning, salsa, and ½ cup of the cheese.


 

Mix everything well. Sprinkle with the remaining ½ cup of cheese. 


 

Bake for 15-20 minutes until hot and the cheese melts. Top with sour cream if you prefer. You can also serve this in a flour tortilla. Enjoy!

  1. Love Mexican food! WE make enchiladas, burritos and tacos at home. We also make several Mexican casseroles. It would be hard to pick my favorite when I love them all so much.

  4. I love all Mexican food & all Tex-Mex food so it's difficult to choose a favorite. Chile Relleno is #1 when I'm wanting comfort food. Taquitos are #1 when I want crunch.

    1. Hi Linda! Mexican food is a favorite comfort food. I do enjoy Tex-Mex, too. I had the best Tex-Mex when I visited Dallas a couple years ago. Yum!

  5. It's easier to say the only kind of Mexican food I'm not fond of is Menudo!;) We eat some kind of Mexican or Tex-Mex at least once a week. My favorite treat when we would eat out was deep-fried cheesy chile rellenos...so bad for you yet tastes so delicious!
