Mango Key Lime Pie by Maya Corrigan #Recipe

When I sent the manuscript of my 8th Five-Ingredient Mystery to my publisher this week, I celebrated with one of my favorite desserts. In past summers we've gone to North or South Carolina for beach vacations and bought a mango Key lime pie at a Publix supermarket. But not living near a Publix, I decided to make my own version of the dessert. My pie has visible mango pieces, unlike the supermarket pie which has a smooth filling. Do you have a favorite summer pie?

For a no-bake mango Key lime pie, use a prepared pie crust as I did. Instead of a graham cracker crust, which is classic for Key lime pie, I chose a pecan crust. Either type works well and, of course, you can bake your own crust. Make sure it has cooled down before putting in the filling. 

Prepare this pie at least several hours or even the day before you serve it.

Ingredients

1 prepared pie crust
1 8-ounce package cream cheese at room temperature
1 14-ounce can of sweetened condensed milk
1-2 Tablespoons lime zest
1/3 – 1/2 cup Key lime juice
1 Large mango, cubed or diced (about 1 1/2 cups)
Optional: whipped cream topping






Zest the lime.

Beat the softened cream cheese until fluffy in a large bowl.

Gradually add sweetened condensed milk and the lime juice slowly and continue beating until smooth.

If you want pieces of mango the size of your diced or cubed mango, fold them into the mixture. For smaller pieces, mash the mango and mix it into the filling at low speed. 

Zest the lime. Stir in the lime zest.








Pour the mixture into a prepared pie crust.

Refrigerate for 4 hours or overnight. If you’re tight on time, put it in the freezer for two hours before serving.




Serve with a dollop of whipped cream.

  4. What a great combination.
    Do the mango pieces (if left whole and not mushed up) sink to the bottom? That seems to be where they are judging from the photos.

    2. Thanks for your comment, Libby. The photo of the whole pie shows some mango pieces on top. They are throughout the pie, though I think that the larger chunks did end up lower down.

  6. Lemon meringue pie is my favourite EVERY season. However, there is something especially heavenly about fresh local berry pie which you can only have for a short time.

  7. This is right up my alley! I love mangos, refreshing pies & especially not having to heat up the kitchen in hot weather. One of my favorites I make at least once every year is author Peggy Ehrhart's Mango Tango pie. I've made it adding whatever berries are in season and what I have on hand, and usually add additional slices of mango and berries to decorate the top.
