Flag Cheesecake from @MaddieDayAuthor #giveaway

MADDIE here. Next week is US Independence Day, which sounds to me like a great excuse to make a flag-themed cheesecake! And I just found a stack of ARCs of NO GRATER CRIME I had forgotten about, so I'm giving away three copies.


Flag Cheesecake
(
Gary Cooper’s Housekeeper’s Cheesecake via Henry Kinsbury via Judy Norsegian)

 Ingredients:

 

(Fruit jelly not shown)

13 whole graham crackers (cinnamon or plain), crushed until fine

1/3 cup melted butter

3 tablespoons granulated sugar

1 teaspoon cinnamon

12ounces full-fat cream cheese (bricks, not whipped), softened

1¼ c white sugar

3 eggs

2 teaspoons vanilla

1 pint sour cream

1 pint local strawberries

1/2 cup local blueberries

1/2 cup grape (or other fruit) jelly

Directions:

Mix 3 tablespoons sugar with graham cracker crumbs and cinnamon. Mix in melted butter, and press into a rectangular pan.


Beat cream cheese with 1 cup sugar until smooth. Add 1 teaspoon vanilla and beat in eggs, one at a time.

Pour into prepared crust and bake 40-45 minutes until center is almost set. Remove from pan and let cool for 10 minutes. 



Mix ¼ cup sugar and 1 teaspoon vanilla into the sour cream. Gently spoon on top of cheesecake until covered and bake 10 more minutes.

Let cool. Chill overnight or at least six hours. 

Slice strawberries in half. Arrange blueberries in a square in the corner and the strawberries cut-side down in horizonal stripes. Melt a half-cup of jelly in microwave for about ten seconds and brush over the fruit.

  7. Welcome today. Congrats on No Grater Crime. Thank you for the recipe. One of my sister in laws used to make a white cake 9x13 that had red and blue swirls inside. than white frosting with a flag like this from fresh fruit. It was always so good. She added something to the cake that she wouldn't tell us about. But we all asked for it every year. LOL My favorite summer dessert is fresh berries and vanilla ice cream. quilting dash lady at comcast dot net

  15. Right now our mango trees are in mega fruit mode. My husband has perfected blending them with the immersion blender and putting them in pop molds to freeze. Just mango, nothing else.
    They are amazing. Somehow pureeing the mango gives it extra flavor.
