Please welcome our guest Allison Brook & #Giveaway

I'm thrilled to welcome our guest and my long-time friend Marilyn Levinson, also known as Allison Brook. We've been in a small on-line brainstorming group together for about ten years now and although we've yet to meet in person, I feel as if we know each other. Hopefully we can finally get together face-to-face at Malice next year.

Marilyn's Broccoli & Cheese Casserole

The fun thing about making casseroles is that you can add many ingredients to the pot. Mine always include veggies, eggs, cheese, bread crumbs (Panko preferred), fresh herbs if I have any, and seasoning. The amounts I'm giving you are estimates as I don't measure ingredients when I cook. Only when I bake.

Ingredients:

4-5 cups of broccoli spears

1 red or yellow pepper

5-6 mushrooms

3/4 Vidalia onion

3-4 eggs

3 T bread crumbs

3/4 cup shredded cheese

3 T Parmesan cheese

1T garlic powder

2 t salt

black pepper to taste

herbs

The day before:

I microwave the broccoli spears for 5 minutes and cut them up into small pieces. I don't use the stems for this recipe.

Next day:

Heat oven to 350 degrees

Spray 2-3 quart casserole dish with oil.

Have all your ingredients out.

Cut up and sauté the red or yellow pepper in olive oil, then add the onion and mushrooms for a few minutes. Don't overcook.

Meanwhile, beat the eggs together.

Add broccoli and sautéed veggies to casserole dish. Add beaten eggs, shredded cheese, bread crumbs, garlic powder and salt and pepper. Also, dried or fresh herbs like parsley, basil or cilantro. Mix well.

Top with Parmesan cheese. I also sprinkled Sweet Paprika on top of this casserole.

Bake uncovered for 45 minutes or until the egg has set.

I also make this recipe with cauliflower and sometimes add dried tomatoes to the mix.

Enjoy!

***GIVEAWAY***

I will be giving away an ARC (Advance reader copy) of my latest book, CHECKED OUT FOR MURDER. (U.S. only, please)

Carrie Singleton and Evelyn the ghost sleuth the slayings of a starlet and a star-crossed psychic in Agatha Award nominee Allison Brook's fourth Haunted Library mystery.

Daphne Marriott strolls into Clover Ridge and informs librarian Carrie Singleton that she's a psychic. But had she foreseen what fate awaited her, Daphne would have steered clear of the quaint Connecticut town. Evelyn, the library ghost, tells Carrie that there's more to Daphne than she lets on.

The mysterious woman grew up in Clover Ridge with her no-good dad, who apparently met his end at the hands of Daphne's brother, Billy. Still, Daphne proves a welcome distraction when Carrie's overbearing mother hits town. Mom's much younger husband, Tom, is in a movie that's lensing locally, and she's there to keep an eye on him: Tom's costar, sultry Ilana Reingold, is also his ex-fiancée, and there's no denying the chemistry is still there. Soon after mingling with the moviemakers at a meet-and-greet, Daphne is found dead.

Carrie and Evelyn investigate, assisted by bushy-tailed library cat Smoky Joe. But the suspect list could overflow the library shelves. Has Billy killed another relative? Is their long-missing mother involved? Or Daphne's mean ex-husband? Carrie's sure she knows who committed the crime, but can she bind together the clues before the culprit Dewey-decimates the town?

  17. Your series sounds fun, Marilyn! Years ago at church potlucks one of our acquaintances always hoped someone would bring a broccoli cheese rice casserole. It got to be a standing joke among us.

When you say 3/4 Vidalia onion, do you mean 3/4 cup or 3/4 of an onion?

    1. Either one. Your choice. But I did mean 3/4 of a Vidalia onion.
