#Turkey Pot Pie from @DeniseSwansonAU

 

Turkey Potpie

My husband and I love turkey, but this year, with only four of us eating our holiday meal, we had a LOT leftover. I ended up with three bags, each holding a pound, in my freezer. After using the first two in my usual recipes, I ran across this slightly healthier version of pot pie. It’s loaded with veggies and a creamy sauce, then topped with a prepared crust so there's no need to make dough. You can substitute chicken if you prefer.

It makes a fantastic comfort food dinner.



  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 cup sliced celery
  • 8 ounces fresh sliced mushrooms
  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • 1 tablespoon dried parsley
  • 2 ¼ cups chicken or turkey stock
  • ¼ cup cornstarch
  • 4 cups chopped cooked turkey breast
  • 1 cup frozen peas and carrots
  • ½ teaspoon ground pepper
  • ¼ teaspoon salt
  • 1 refrigerated pie crust
  • 1 large egg, whisked.

 

Preheat oven to 400 degrees F. Coat four, four-to-five-inch baking dishes with cooking spray.

Heat oil in a large nonstick skillet over medium-high heat. Add mushrooms; cook, stirring often, until browned and tender, about 5 minutes. Add onion and celery; cook, stirring often, until softened and lightly browned, about 7 minutes. Sprinkle sage, thyme, and parsley over mixture, then add frozen vegetables and 2 cups of stock. 





While that mixture comes to a boil, whisk remaining stock and cornstarch in a measuring cup or bowl until smooth. Add to the pan and bring back to a boil. Stir in turkey, pepper and salt. 







Once it has thickened transfer mixture to prepared baking dishes. Allow to cool completely. I put them on a large sheet pan for easier handling in and out of the oven.






Roll out crust and cut four circles that are just slightly larger than your baking dishes. You will have to use scraps and re-roll. Invert crust on top of the turkey mixture and slice a couple of slits in the center of the crust. Brush with egg. 






Bake until golden and bubbly, about 30 minutes.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.

     Too bad, whoever killed her father, now wants Lexie dead as well.

  2. Pot pie is such a comfort food.
    There was a great British TV show called Pie in the Sky. The main character was a police officer who wanted to retire and just run his Pie in the Sky restaurant with their renown pot pies. He had to settle for policing and cooking combined. The pot pies sounded luscious.
