Dutch Baby by Maya Corrigan +Giveaway

My favorite pancake is a Dutch Baby. I seldom make regular pancakes because I don't like to pour batter, flip, remove, and repeat over and over. For a Dutch baby serving 2-3, I pour batter once and bake it in the oven. My sleuth's Granddad, who won't try any recipe with more than five ingredients, would approve. INGREDIENTS

2 1/2 tablespoons butter or margarine

2 eggs

½ cup Gold Medal™ all-purpose flour

½ cup milk

pinch of salt

Optional: 1 teaspoon vanilla and powdered sugar for sprinkling




Preheat the oven to 425°F.

In a 9-inch glass pie plate or cast iron skillet, melt the butter in the oven; swirl or brush the butter along the bottom and side of the plate or skillet.

Whisk the eggs in a medium-sized bowl. Beat or whisk in flour, milk and salt just until mixed. A few lumps are okay. Pour the mixture into the heated plate or skillet.





Bake 12 to 15 minutes or until the Dutch baby is puffed up, golden in the middle, and browned along the edges.

If desired, sprinkle confectioners sugar over the top and add berries or treat it like a typical pancake, adding syrup or jam.

Cut in wedges like a pie to serve. A Dutch baby makes an excellent dessert as well as a breakfast dish!

During Bayport's Dickens of a Holiday festival, Val is hosting a private tea party for the volunteers dressed as Dickens characters including Scrooge and the Ghost of Christmas Past. A Santa who's more naughty than nice also comes to tea. An unexpected guest arrives, "shrouded in a deep black garment" like the eeriest Dickens ghost, and hands out gingerbread men with white icing skeleton bones. Though the creepy treat called a gingerdead man looks like a Halloween leftover, cookie addict Santa can't resist it. When the man in red turns blue, Val and Granddad have a cookie-cutter killer to catch.

  2. For the most part, I am a purest when it comes to pancakes but if have always been partial to blueberry if I need to change it up. I wonder how a gingerbread Dutch Baby would taste, hmmmm.   4. Greatly appreciate the delicious sounding recipe for Dutch Baby that I most assuredly will be trying. My favorite pancake without a doubt has to be the one in front of me. Most times that's one with blueberries. We have access to a huge blueberry bush that I've gotten over a bushel berries off on one year. So there's always blueberries in freezer.

  5. As a kid my mom only made plain pancakes, so now my favorite is anything added- chocolate chips, raspberry, apple cinnamon, etc. I still like plain ones though. My only hard requirement is real maple syrup. We always tapped our own trees so anything not straight from the tree just isn't the same!

  6. Welcome. Thank you for sharing your recipe. It looks fabulous. My favorite pancake is from Walker Brothers. They make an apple pancake that is bigger than the plate. Our family of four can eat and eat and take half of it home still. It doesnt even need syrup. Just a little butter. quilting dash lady at comcast dot net

  8. I like pancakes, but since being diagnosed with diabetis I don't eat them very often. I do indulge occassionally the last time being blueberry crepes at Bob Evans-sooo good!

  9. I saw a idea on facebook the other day about using muuffin mix to make pancakes-you can make a lot of different kinds very easily that way.

  17. My favorite is a variation of the Dutch pancake my husband makes with apples. He uses the cast iron skillet. Pour real maple syrup on that baby and I'm in breakfast heaven.

  23. I used to prefer buttermilk pancakes, but recently my daughter purchased a Disney Mickey Moused waffle maker. She does a vegan waffle batter because she is allergy to dairy. Yum. And the waffles look adorable. 1cow0993atgmaildotcom

  34. Weird I may be, but I can't remember ever having had a pancake. My family and I are waffle people. I've heard people say that there really isn't any difference between the two, but we just don't do pancakes. Thanks for sharing this recipe (might have to make it and see if those people are right).   37. I am not a big fan of pancakes although I do like German pancakes with not a lot of lemon on them. Wow it has been more than 20 years since I have had pancakes I used to make them for my kids when they were younger but now they have their own families and my son does make pancakes for the grandgirls and they love them. peggy clayton ptclayton2 @ aol.com
