MADDIE here, with one more recipe from Candy Slain Murder, one that's perfect for the cooling temperatures of fall.
Robbie Jordan's assistant in the country store restaurant reels after a young man shows up saying he is her half-brother...even though she never knew she had any siblings. But when Danna Bickley confronts her mother, the mayor of South Lick, Corrine explains what happened. They invite Marcus for dinner, and include Robbie and her boyfriend, Abe.
Corrine serves a delicious, hearty beef stew. And here's the recipe I included in the book!
Corrine’s Beef Stew
Serves four to six.
Ingredients
Olive oil
1 pound stew beef, cut into one-inch cubes
Salt
Pepper
Flour
One large onion, diced
3 fat garlic cloves, minced
2 carrots, peeled and cut into
one-inch chunks
8 ounces mushrooms, cleaned and
quartered.
2 good-sized potatoes or 3 medium,
scrubbed and cubed.
1 cup hearty red wine like a
Cabernet Sauvignon or a Burgundy
2 cups beef or chicken stock
2 tablespoons minced fresh rosemary
1/2 cup chopped fresh parsley
Directions
Preheat oven to 350 degrees
Fahrenheit.
Season beef with salt and pepper and dust with flour.
When one side is brown, turn until other side browns. Remove to a plate and repeat until all meat is browned. Remove all to the plate.
Reduce heat to medium low, add more oil, and sauté onions until tender but not brown. Return all meat and onions to the pot and add garlic.
Sauté for one minute. Add carrots, mushrooms, potatoes, stock, wine, and rosemary and bring to a simmer.
Remove from heat. Cover the pot and bake for two hours or until meat is very tender.
Whisk water into one tablespoon flour until it makes a paste, then stir in stock from the pot until it becomes a slurry.

We recently moved to Georgia where Brunswick Stew seems to be a staple. I tried making it using the slow cooker feature on my Instantpot, but after 4 hours it was not cooked. I switched to the pressure cooker function and voila, a delicious stew. Next time I will cook it on top of the stove!!

The recipe for Corrine’s Beef Stew sounds delicious and the perfect warm your tummy meal for a cold winter's day. We love a nice pot of chili in the winter too. Now mind you hubby loves things spicy hot so my chili is made with the addition of a spice called Hotter Than Hell as well as some cayenne and ghost pepper powder for that extra kick. We love chili beans in ours to make it an even heartier meal. Another cold weather food that we enjoy is the good standby of potato soup made with lots of onions.
ReplyDeleteI've never owned a crock pot or instant pot. Can't say I would ever want one either. Being a homemaker, I've never had to worry about putting on supper and then go to work. To me there's something happy about checking on a dish and giving it a stir teasing the taste buds with a smell of what's cooking as you do.

What a delectable dish. I don't own a crock pot or instant pot so I use a pot on the stove which works well. I would love to try out an instant pot though since so many enjoy using that method. I make chicken stews starting in the fall and through the winter. saubleb(at)gmail(dot)com

ReplyDeleteYears (and years) ago I found a recipe in a Cambpell's cookbook for Oven Beef Stew, with a tomato soup base (Campbell's of course). It is delicious and we love it. Your recipe for Corrine’s Beef Stew looks downright delicious! I have an Instapot and a slow cooker. I usually put my slow cooker into action to make chili. I serve the chili over corn chips and topped with shredded cheese for Frito Pie. I make plenty so leftovers go over baked potatoes or over tortilla chips for nachos.

I use all three appliances, often at the same time for the 5 of us, and to have leftovers or different dishes for later. My fall faves are variations of the usual suspects: soups, stews, chili, pot pies/shepherd's pie, casseroles (like King Ranch Chicken)and roasted meats and veggies. Gumbos & curries are great 2 pot meals since it's best to have them with rice! I've already made some fabulous pot roasts, both pork & beef, in the IP several times recently, and I always sear the meat first. Delish! lola777_22 at hotmail dot com
