I’ve been showing you a lot of baking recipes lately to illustrate TEA AND TREACHERY, the first in my new Tea by the Sea series, so I thought it’s time for a change. As you know, I love my slow cooker! I like to make big batches of meals that will store well in the freezer. This recipe makes a dish as as flavourful as chicken from your favourite takeout place, and it couldn’t be easier.
Teriyaki Chicken in the Slow Cooker
½ cup soy sauce
¼ cup chicken broth
¼ cup brown sugar
3 tbsp. quick-cooking tapioca
3 tbsp. ketchup
2 tbsp. rice vinegar
1 tbsp. chopped peeled fresh ginger
4 cloves garlic, minced
1 tsp pepper
2.2 libs boneless skinless chicken thighs, cut into strips
Combine all ingredients except chicken in a bowl.
Add chicken strips and coat chicken with the sauce
Place in slow cooker, cook on low for 4 hours
