#Peanut Zucchini Noodle Salad with Chicken by @DeniseSwanson

Heading into the dog days of August, I like to keep our meals light, and bonus points if they don't heat up the house too much.

With our garden producing, I use the zucchini as often as possible in making a tasty, healthy supper. This salad along with a loaf to crusty bread is perfect for a summer dinner.

½ cup creamy natural peanut butter
½ cup hot water
2 tablespoons lime juice
1 tablespoon light brown sugar
1 tablespoon reduced-sodium tamari or soy sauce
2 ½ teaspoons fish sauce
½ teaspoon hot sauce, such as Sriracha
½ teaspoon grated garlic

4 cups spiralized zucchini (1 large)
3 cups chopped red cabbage
1 cup shredded carrots
1 tablespoon cilantro
2 cups shredded rotisserie chicken (8 ounces)
¼ cup chopped unsalted roasted peanuts

Combine peanut butter, water, lime juice, brown sugar, tamari (or soy sauce), fish sauce, hot sauce and garlic in a blender. Pulse until smooth.

Combine zucchini, cabbage, carrot and cilantro in a large bowl. Add the dressing and toss to coat. 

Top the salad with chicken and peanuts.

 Serve immediately.

  1. The veggie mix is so colorful!
    As long as you're shredding all those other vegetables, you could also shred the zucchini, rather than spiralize it.

  2. To me, the zucchini gets too watery when it's shredded and the sauce doesn't adhere to it as well.

    1. That's why recipes with grated zucchini usually suggest patting it dry. I guess a salad spinner would help.
