Coconut Cilantro Rice #Recipe @PegCochran



I wanted to serve rice with my chicken satay but I didn't want just plain rice.  I wanted something with a bit more ZING!  I scrolled through some recipe sites and stumbled upon various recipes for coconut cilantro rice.

Some called for jasmine rice or even plain white rice but I wanted to use basmati, which is what I had on hand.  I love basmati--it smells so fragrant and has so much more flavor than regular rice.  

I adapted a loose version of the recipes for the quantity of rice I was cooking.  Here's what I did.

Ingredients

1 cup basmati rice
1 14-ounce can coconut milk (lite works fine)
Water to add to coconut milk to equal two cups liquid total
salt and pepper to taste
chopped cilantro to taste

Mix rice, coconut milk and water.  Add salt and pepper to taste. I cook my rice in the microwave in a special plastic rice cooker thingie I bought ages ago in the grocery store. 




Cook on high for 5 minutes.  Reduce microwave to 50 percent and cook for 15 minutes more. 

Stir in chopped cilantro to taste and fluff with a fork.

    I'll ski the cilantro, though. Soapy greens aren't my idea of fun eating.

  3. I like to split my caprese salad between the classic balsamic dressing and a pesto. I haven't made pesto with pine nuts but am eager to try out your recipe. I thoroughly enjoy cooking with your cozy recipes and eating my way through both series.
