This recipe is from Skinnytaste.com. It's super simple, easy and very delicious! I have made it twice now since I discovered the recipe.
Ingredients:
Pork chops (I had 3 fairly thin chops)
1 tsp. butter (I subbed olive oil)
Salt to taste
Pepper to taste (freshly ground)
3 TBS chopped onion
3/4 cup chicken broth
1 TBS Dijon mustard
2 TBS chopped fresh herbs (I used parsley)
Directions:
Dry chops on paper towels and season with salt and pepper to taste.
Heat butter or oil in pan over medium heat. Add chops and cook/brown on one side. Flip and cook/brown on the other side. Length of time will depend on thickness of chops. Mine took only a few minutes a side.
Remove chops and keep warm.
Add onion to pan and saute until wilted and beginning to turn golden. Add in chicken broth and cook down to 1/2 a cup. The sauce will thicken slightly.
Add mustard and herbs. Stir.
Pour sauce over chops and enjoy!

With today's leaner pork it's important to not overcook it. Otherwise you get a very chewy piece of meat.
