Robbie goes back to her home town of Santa Barbara in this book for her tenth high school reunion. She makes friends with the owner of the Nacho Average Cafe, where she eats and stays in the B&B upstairs. Carmen's son, a high school friend of Robbie's, makes a version of these easy mini-cakes as a dessert at his
food truck in Nacho Average Murder. They're like eating Mexican hot
chocolate in a cake.
Mexican Chocolate Mini-Cakes
Ingredients:
1 1/3
cup unbleached flour
1/2
teaspoon salt
1/3
cup dark cocoa
¼
teaspoon chipotle chili powder
1 teaspoon cinnamon
1
tablespoon baking powder
1
stick butter, room temperature
2
eggs
3/4
cup sugar
1
tablespoon dark rum or bourbon
Directions:
Preheat
oven to 375 degrees Fahrenheit. Spray a 24-cell mini-muffin pan (or two 12-cell
pans) with oil or wipe with butter.
Mix
all dry ingredients in a small bowl.
Beat
butter until creamy. Add eggs and sugar and beat until mixed.
Add
dry ingredients and beat on medium for two minutes.
Spoon
evenly into mini-muffin cups.
Bake
until toothpick inserted into the cakes at the center comes out clean, about twelve
minutes. Cool on a wire rack for five minutes in the pan before removing, then
cool completely before serving.
Because quarantine, I didn't have dark cocoa powder, so I used regular. And, oops! The cinnamon and butter didn't make it into the photo. |
Get the butter, sugar, and eggs nice and creamy. |
Add the dry ingredients. |

Mine will be all American unless travel is open by then. When traveling I like trying the specialties of that area.

ReplyDeleteYum, Edith/Maddie, that looks delicious! Since my family's from Louisiana and I've spent most of my life now in Texas, I like a party in my mouth! So, yes to the spicy,and I make migas often, though I'm more of a brunch person! And I love breakfast for dinner, too! Just depends on my mood. For Karen, my most memorable Eggs Benedict were a few decades ago at Brennan's in NOLA while visiting for a cousin's wedding. Made even better with a side of bananas foster and several spicy Bloody Marys! ;)

ReplyDeleteMy favorite breakfast is the breakfast buffet at a local popular restaurant. It has EVERYTHING....French toast, eggs, toast, bacon, sausage, ham, muffins(all different kinds), mini pancakes, mini corn fritters, apple pie fritters, grits, etc. DELICIOUS!

I typically order an all-American breakfast. A perfect breakfast to me would have buttermilk pancakes with butter and fresh maple syrup, thick-cut maple bacon, sausage patties (from ground sausage, not pre-formed), hashbrowns grilled to a golden crisp with a few onions, eggs over medium with a side of toast or fresh biscuits and jam.... Now, I'm hungry ... lol.
