Chickpea Dumplings in Curried Tomato Sauce by @DeniseSwanson



I discovered this recipe during Lent. The tender chickpea-flour dumplings with chiles and greens make a healthy meatless dinner that still has plenty of protein. I will warn you that it is spicy and you may want to adjust some of the ingredients if you prefer a milder dish.




 1 cup plus 2 tablespoons chickpea flour
 4 cups finely chopped spinach, divided
 ⅓ cup canola oil plus 2 tablespoons, divided
 ¼ cup finely chopped red onion
 ¼ cup whole-milk plain yogurt
 ¼ cup finely chopped jalapeño pepper
 ½ teaspoon salt plus 1/8 teaspoon, divided
 2 teaspoons coriander 
 1 teaspoon cumin 
 1 teaspoon mustard 
 1 tablespoon curry powder
 1  teaspoon powdered ginger
 1 (15 ounce) petite diced tomatoes, undrained
 1 (15 ounce) can tomato sauce


Mix flour, 1/2 cup greens, 1/3 cup oil, onion, yogurt,  jalapeño and 1/2 teaspoon salt in a large bowl. 












 Shape into 12 dumplings.












Heat the remaining 2 tablespoons oil in a large skillet over medium-high heat. Add coriander, cumin and mustard; cover and cook about 30 seconds. 










Stir in curry powder and ginger, then add tomatoes and their juice and tomato sauce; stir to combine. 












Stir in the remaining 3 1/2 cups greens and 1/8 teaspoon salt. Bring to a simmer.













Nestle the dumplings into the sauce, cover and cook, turning the dumplings over and basting with the sauce occasionally, until tender, about 20 minutes.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.
     Too bad, whoever killed her father, now wants Lexie dead as well.

  3. I was surprised that our grocery had chickpea flour! It turned out to be a nice hearty flour that I ended up using for other savory recipes.
