If you’re not getting out to your favourite Thai restaurant these days, this is an easy and delicious recipe. Thai red curry paste and fish sauce should be available in most supermarkets.
This makes a lot of sauce, as curry is served in Thailand and Thai restaurants, so if you like your sauce thicker I’d suggest just leaving out the added water
Thai Shrimp Curry
Makes four servings
2 tbsp. oil
2 green onions chopped
1 tbsp. chopped fresh ginger
3 1/2 tbsp. red curry paste
2 sweet potatoes, peeled and cubed
1 400 ml can coconut milk
1 tbsp brown sugar
2 tsp fish sauce
375g large shrimp, shelled and deveined
3 cups snow peas
2 tbsp. lime juice
2 tbsp. chopped cashews
In large saucepan, heat oil over medium heat. Cook white parts of green onion and ginger, stirring occasionally for 3 minutes
Add curry paste; cook, stirring for 1 minutes
Mix in sweet potatoes, coconut milk, sugar, fish sauce and ½ cups water and bring to boil. Reduce heat and simmer, stirring occasionally until sweet potatoes are tender, about 6 minutes. Add shrimp and snow peas and cook until shrimp are cooked through and snow peas are tender-crisp, about 4 minutes
Remove from heat; stir in lime juice. Spoon into bowls. Sprinkle with remaining green onions and cashews.

There's a tea shop in Santa Ana CA that I so miss since relocating to Montana. There is one downtown but never been. Might once we are no longer locked down and it survives. But the best tea I ever had was in the Birmingham UK home of my friends, the Tudors.

DeleteI don’t normally drink a lot of tea. But Sometimes during the autumn/winter months I like to have Pumpkin Spice or Apple cinnamon which are my favorites. I’ve never been to a tea room but always wanted to because those little sandwiches and desserts look so yummy!
ReplyDeleteI haven't found a tea place near me. However, I indulged many times in having tea while living in London for a couple of years. My favorite experience was having tea in one of their shops/cafes in Kew Gardens. We were at a small table nibbling all of the treats of scones with jam and butter or clotted cream, small sandwiches and pastries. Surrounding us were various interesting potted plants and near our table was a white marble sarcophagus.
