My husband and I love breakfast for supper, so what could be even better? A breakfast favorite turned savory!
Also called a German pancake, we make this Dutch baby recipe healthier and more dinner-like by topping it with a fresh salad, cheese and fried or poached eggs.
⅔ cup unsweetened vanilla almond milk (or use whole milk if you prefer)
½ cup all-purpose flour
½ teaspoon salt
½ teaspoon ground pepper, divided
3 tablespoons unsalted butter
1 tablespoons extra-virgin olive oil
2 teaspoons lemon juice
2 ½ cups baby arugula or arugula and spinach combo.
1 ounce Parmesan cheese, shaved
Place a 10-inch cast-iron skillet in the oven; preheat to
425 degrees F.
Combine 3 eggs, milk, flour, salt, and 1/4 teaspoon pepper in a blender
Blend until frothy, about 1
minute.
Carefully remove the pan from the oven, add butter and
swirl the pan until the butter is melted.
Immediately add the batter.
Bake until puffed and golden brown, about 20 minutes. Middle will sink when it's taken from the oven.
Meanwhile, fry or poach eggs
Whisk the remaining 1 tablespoon oil and lemon juice in a
medium bowl. Add arugula and toss to coat.
Serve the Dutch baby topped with the fried eggs, arugula,
Parmesan and the remaining 1/4 teaspoon pepper.
