Whether you’re rushed getting the kids in their costumes and out the
door for trick or treating, or decorating your house and laying out the treats,
you probably don’t have time for dinner. So grab something quick and nutritious
for yourself and the kids like these muffins which are perfect for apple
season!
Ingredients:
·
2 cups all-purpose flour + 2 teaspoons for coating apples
·
1½ teaspoons baking powder
·
½ teaspoon salt
·
2 teaspoons ground cinnamon
·
2 cups finely diced apples
·
½ cup unsalted butter, room temperature
·
1 cup granulated sugar
·
2 large eggs, room temperature
·
½ cup milk
For the Topping:
·
2 tbsp sugar
·
1 tsp ground cinnamon
Instructions:
1.
Preheat oven to 375º F. Prepare
muffin tins
2. Sift together
flour, baking powder, salt, and cinnamon in a medium bowl. Set aside.
3. Cream together
butter and sugar until lightened in color, about 3 minutes. Add an egg, one at
a time, taking care to fully incorporate before adding the other. Mix in
vanilla.
4. Gently fold in
flour mixture, alternating with milk. Stir until just combined.
5. Toss together diced
apples and 2 teaspoons of flour to coat apples in a separate bowl.
6. Fold in diced
apples and scoop mixture into prepared muffin tins, filling about 2/3 to 3/4
full.
7. Sprinkle lightly
with topping
8. Bake until a
toothpick or skewer inserted in the middle comes out clean, about 30 minutes.

ReplyDeleteA question. " 2 teaspoons ground cinnamon + 1/2 teaspoon for coating apples" When is the 1/2 teaspoon added to the apples? With the flour coating?
The extra cinnamon is added to the sugar to make the topping. Sorry if that wasn't clear.
