Peanut Butter Oatmeal Monster Cookies

ELLIE: We are fully in the Halloween spirit in our house. We’re also in the middle of my son’s high school cross country season. That means lots of gorgeous afternoons spent in the Siskiyou Mountains watching runners breeze past us. I often have a crowd of hungry teens at my house and these Peanut Butter Oatmeal Cookies are the perfect post-race snack. They’re packed with protein and oats. That’s basically health food, right?

I’m kidding, of course, but these cookies tend to disappear quickly. I’ve learned to double each batch that I bake. They also freeze well, and they make for a great Halloween treat!

Peanut Butter Oatmeal Monster Cookies

Ingredients:
1/3 cup butter (at room temperature)
¾ cup peanut butter (not crunchy)
½ cup sugar
½ cup brown sugar
2 eggs
2 teaspoons vanilla
1 cup flour
1 ½ teaspoons baking soda
1 teaspoon salt
2 ½ cups quick oats
½ cup regular M&M’s
½ cup peanut butter filled M&M’s

Directions:
Preheat oven to 350 degrees. In a mixer, cream together butter, peanut butter, sugars, and vanilla. Add eggs and mix until creamy. Slowly incorporate flour, baking soda, and salt. Once combined mix in oats on low speed, then add M&M’s and mix by hand.

Line a cookie sheet with parchment paper. Roll dough into one-inch balls. Place on cookie sheet and bake for 8 minutes or until golden brown.
