I’m kidding, of course, but these cookies tend to disappear quickly. I’ve learned to double each batch that I bake. They also freeze well, and they make for a great Halloween treat!
What are you baking for the monsters in your house this month?
Peanut Butter Oatmeal Monster Cookies
Ingredients:
1/3 cup butter (at room temperature)
¾ cup peanut butter (not crunchy)
½ cup sugar
½ cup brown sugar
2 eggs
2 teaspoons vanilla
1 cup flour
1 ½ teaspoons baking soda
1 teaspoon salt
2 ½ cups quick oats
½ cup regular M&M’s
½ cup peanut butter filled M&M’s
Directions:
Preheat oven to 350 degrees. In a mixer, cream together butter, peanut butter, sugars, and vanilla. Add eggs and mix until creamy. Slowly incorporate flour, baking soda, and salt. Once combined mix in oats on low speed, then add M&M’s and mix by hand.
Line a cookie sheet with parchment paper. Roll dough into one-inch balls. Place on cookie sheet and bake for 8 minutes or until golden brown.
