Things Happen - Blueberry "Loaf" #recipe + books #giveaway

Things happen. Often things slip away from us. We thought we had a guest for today and it turns out, mixed signals! We don't.

BUT WE DO HAVE A BOOKS GIVEAWAY.  Yes, books.  Two of Krista's books plus 2 of my  books to one commenter.  See below.


I adore blueberries. I also adore brown sugar! I love it added to coffee cake and anything banana. So I recently added brown sugar to my cereal and adorned it with blueberries. Voila. Something new, different, and filled with things I love.

I also adore blueberry muffins. You can see where this is going. I've shared a recipe for gluten-free muffins made with pure cane sugar before. For a change, I added brown sugar to the mix and rather than make the semi-time-consuming muffins, I poured the whole mix into a loaf pan.

When I'm on deadline, easy is important. Mix and dump is important. Faster, faster is important. So I have more time to write.

So here is an easy, fast, blueberry loaf that turned out deliciously moist!

*This is a gluten-free recipe, but it's easy to make it regular. Just switch out the GF flour for regular and omit the xanthan gum.

Enjoy!

Blueberry Loaf
Gluten-free but can be made "normal"

Preheat oven 375 degrees

Makes 1 loaf

Ingredients:

½ cup plus 2 T. milk
½ cup butter (1 stick), at room temperature (I melt it in microwave)
1 1/4 cup brown sugar
2 eggs
1 teaspoon GF vanilla extract (vanillin is okay)
2 ½ cups blueberries 
2 teaspoons GF baking powder
½ teaspoon Xanthan gum
¼ teaspoon salt
1/2 cup potato starch
1/2 cup tapioca starch
1 cup sweet white rice flour
1 tablespoon whey powder


Directions:

Mix the milk, butter, sugar, eggs and vanilla extract.

Mash 1 cup of the blueberries. Add the berries and the GF baking powder to the mix.

Stir together the gluten-free flours, xanthan gum, whey powder, and salt. Add the flour to the egg mixture.

Add 1 ½ cup MORE blueberries, whole (not mashed). Fold together.

Pour into greased loaf pan.

Bake 45 minutes

  8. Sometimes. I do keep a planner with all those things listed that I check every morning to see what I have to do that day. I even list activities that I do every week. When I set up my new calendar in January I go ahead and list all birthdays, etc. for the coming year to help me remember.

  16. First off, you sound like when when it comes to blueberries and bananas. I love them so much that one year I picked 133 pounds of them. That may not sound like much until you realize how small they are and how many it takes to make a pound and then multiply that by 133. It was a lot of hot hours in the summer sun, but filling not only my freezer but several elderly widows too made it all worth while. Needless to say we tried about every recipe known to man that year. Hubby even made me some homemade braided bread with a cream cheese and blueberry filling that was to die for. I will definitely be trying this blueberry recipe.

    Being an old Army brat and having it drilled into my head to be early or on time but never, never ever late, I haven't been late or missed an appointment. However, things do happen because I can have my time or the way event should plan out planned only to have some last minute thing or person turn my plans all upside down. Even with the confusion and unnerving feels at times, things usually always turn out for the best. In fact some of the most fun times have been things went a completely different direction than I thought they would. As I've gotten older, I've learned to be like a duck and go with the flow. It ruffles a lot less feathers. Of course the duck looks smooth and relaxed on top of the water while his poor little feet are giving it all he's got. :)

  18. Can't think of an appointment I've missed, but I usually have to start out early because you can bet that nobody will want anything until the second I'm about to leave so it takes me a good 5-10 extra minutes to actually get out the door.

  29. I am lucky, I guess, that I seem to be able to keep my dates straight. That said, just because I KNOW I need to be somewhere at, say, 1PM, doesn't mean I make it. I am one of those people who seem to be perpetually 5 minutes late!!

  33. My husband has been diagnosed with Stage 4 COPD. We have lots of Dr. appointments. We have 2 calendars, plus I put them all on my phone with a reminder the day before. We have over a hour drive to get to the VA hospital, so we always have to be on time.

  34. I have two calendars I write appointments on: one full sized on my desk and one small one in my purse. I have to remember to look at them though. Being retired I have no concept of what day it is! My husband puts post-its on the mirror over his sink. Some of those have been there an awfully long time. . .

  54. I have missed therapy appointments because I had the wrong time in my head and was late. Birthdays of friend on facebook, I send greetings to if I have had computer on that day. Some I remember because they are special to me or are on certain dates that are easy to remember as Dec 7 or 4/15.

  69. Oh my gosh yes I missed an appointment. My annual OB/Gyn appt. I’ve gone to the same doctor every year for over ten years. This one year I just totally forgot my appt. They called me and I was so embarrassed and apologetic and they rescheduled me for the next day. Found out why I was so absent minded, I was pregnant. Oh boy. That was 25 years ago, I still see the same doctor and we still laugh about that one time that I forgot my appt.

So I got a calendar for the kitchen and one for my purse. Things started coming together better. Now I am very organized. I still miss things, but not as much.

  79. I'm usually pretty good at keeping appointments. In fact, I usually try to be early. When I worked though, keeping appointments wasn't as easy. I'd sometimes miss family birthday parties and other kind of parties. However, couldn't during the times I worked which was practically everyday because the place where I worked didn't allow it so that left the weekend which wasn't good for me because my hours and the place where I wanted to make appointments just didn't match. Sure I had days off but the thing was, I never knew my schedule until less than a week before hand. All days off had to be in a month ahead of time. Who knows their plans a month ahead of time? Since the store closed, keeping appointments is so much easier to set and keep.

But recently I forgot my GRANDDAUGHTER'S birthday. It popped up on my calendar, but I didn't check it until a day late. I felt so bad.
