#Black Pepper-Curry Chicken Saute by @Denise Swanson



The other night, I decided to experiment with a new recipe and although I sometimes find curry flavor overwhelming this one was just right.

Ingredients
1 head of cauliflower divided into florets
1 pound skinless, boneless chicken breasts, cut into 1-in. pieces
3/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper
1 tablespoon canola oil, divided
1 1/2 cups chopped onion
2 teaspoons minced ginger
3 garlic cloves, minced
2 teaspoons curry powder
1 cup canned light coconut milk
2 teaspoons fresh lime juice
2 teaspoons basil
2 cups hot cooked brown rice

Preheat oven to 375. Arrange cauliflower florets on a baking sheet and spray with olive olive oil. Sprinkle with salt and pepper and bake for 30-45 minutes until slightly browned.  








While the cauliflower roasts, sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon ground pepper. Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high. Add chicken to pan. Cook for 5 to 6 minutes, stirring frequently, until chicken is lightly browned and almost cooked through. Remove chicken from pan.



Reduce heat to medium. Add remaining 1 1/2 teaspoons oil to pan and swirl to coat. Add onion and cook 4 minutes or until tender, stirring occasionally. Add ginger and garlic and cook until softened, about 1 minute. Add curry powder and cook 15 to 30 seconds or until fragrant, stirring constantly. Stir in coconut milk, lime juice, and remaining 1/2 teaspoon salt. Return chicken to pan. Cover, and cook over medium-low until sauce is slightly thickened and chicken is done, about 5 minutes. 

Spoon cooked rice onto plate along with roasted cauliflower and top with chicken mixture. Sprinkle with basil.
