Now that I work from home, I don’t use my slow cooker as much as
I did when I was a school psychologist, but this recipe was too good to pass
up. Note: Look for chicken andouille near the smoked sausages in the
refrigerated section of your grocery store. Serve with cornbread for a hearty meal.
Ingredients
12 ounces smoked chicken andouille sausage, chopped
4 cups chicken stock
2 (10-oz.) cans unsalted
diced tomatoes and green chiles
1 cup chopped yellow
onion
1 cup chopped yellow bell
pepper
1/2 cup chopped celery
6 ounces tomato paste
1 tablespoon Creole seasoning
2 garlic cloves, minced
1/2 teaspoon salt
2/3 cup uncooked brown
rice
16 ounces raw medium
shrimp, peeled and deveined
Spray a large nonstick skillet with Pam and heat over
medium-high. Add sausage and cook, stirring occasionally, until browned, about
4 minutes.
Transfer to a 5- to 6-quart slow cooker. Add stock, tomatoes and
chilies, onion, bell pepper, celery, tomato paste, Creole seasoning, garlic,
and salt. Cover and cook on low 4 hours.
Stir in rice. Cover and cook on low until rice is tender, about
2 hours.
Stir in shrimp. Cover and cook on low 30 minutes.
Divide soup
evenly among 6 bowls.
