From Daryl aka Avery:
See giveaway below...
We all need simple and easy after the holidays. Right? So, here's something that's just right for a simple meal. Delicious for New Year's Eve, if you like.
I love casseroles, and I especially like them when I can use foods that are already in my refrigerator.
I always have spinach on hand. It goes well in salads, omelets, and so much more. It worked perfectly for this little dish. In addition, I had cooked chicken thighs in my freezer, so that made this dish easy-peasy. I wrap them individually so they're ready to go whenever I need cooked chicken. (*I bake them at 300 degrees for 35-45 minutes, wrapped in foil. Let cool and freeze.)
As for cheese? I always have cheese in the hopper. You can use any cheese that melts well in this dish. Be creative.
Speaking of cheese...I'm offering a cheesy giveaway to 5 commenters today. Yes, 5! Why? Just because... Okay, moment of truth. Because I ordered too many books from my publisher and I'm ready to clear off some shelves which put me in the giving mood.
Are you ready to read a book in the middle of the Cheese Shop Mystery series? Hope so.

Chicken Spinach Cheese Casserole
Serves 2 (double for
4)
2 chicken thighs or one large chicken breast, cubed
1/4 teaspoon garlic powder
1/8 teaspoon white pepper
4 ounces fresh (1/2
cup cooked) spinach (*I microwave for 1
minute covered with paper towel)
1 cup cream cheese
1/4 cup chives, chopped
salt and pepper to taste, about ½ teaspoon each
2 tablespoons olive oil
6 ounces (3/4 cup) chicken broth
1/2 cup mozzarella cheese, shredded or diced
Preheat oven to 375 degrees F.
Set chopped chicken in small baking dish. Dust with garlic
powder and white pepper. Top with
spinach.
In a small bowl, mix cream cheese, chives, salt and pepper,
and olive oil until fairly smooth. Add chicken broth and continue to mix. Pour
over the chicken and spinach.
Cover with foil and bake for 15 minutes.
Remove from oven and top with mozzarella cheese. Bake another 15 minutes, without the foil,
until cheese is toasty.

ReplyDeleteI make casseroles often. It is normally just me for meals, so they work well. Spinach is my go to for salads and add-ins. This will be my New Year's meal, so thank you for the recipe!
ReplyDeleteI hope you and your family had a lovely Christmas!
My plans for the coming year aren't too many to feel stressed about. I vow to use my scrap fabric, frame all of my photos that need it and I have joined Dru Ann's reading challenge in hopes that I organize the books I have read and faithfully write reviews after each. I am also thinking of starting a book blog, but we will see about that one!
Thank you for the book giveaway. I do enjoy your series.
debprice60@gmail.com
As a correction, that is Escape with Dollycas, as the book challenge, not Dru Ann! I should never think without coffee!
DeleteWhat a great challenge. I'm sure Dru Ann would wish you well! ~ Daryl
DeleteHi Daryl . I will certainly try this casserole. I would like to read one of your “cheese” shop books. Trying to be more organized with my books and travel more. Jcook22@yahoo.com

ReplyDeleteHappy Holidays to you and yours. In 2019 I hope to have better health and also be more sound financially. I'm also hoping to return to reviewing of books for various authors. My fingers are crossed I might be chosen as one of the lucky five. robeader53(at)yahoo(dot)com
ReplyDeleteA couple of things for 2019: First is to try out a lot more new recipes. I've fallen into a dinner rut, so it's time to find some new things to put in the mix. And secondly is to put aside at least a half-hour each day to read, probably just before bedtime.
ReplyDeleteFYI, I have found a half hour before "dinner" is the perfect time for me to read. i'm ready to relax and still able to focus! Ha! ~ Daryl
DeleteLove Cheese. Love Cozy Mysteries. This series looks perfect for me. In 2019 I plan to add some new things into my simple exercise routine of steps and pedalling (on my mini cycle - it's good for my knee). Hope to alternate days of weights, balance exercises, and my weighted hula hoop. Also to continue my volunteer work at our local library where I work with the Friends, shelving, and on the daily book sale. Zibbby (at) gmail (dot) com
ReplyDeleteZibby, hula hoop? Go, girl. ~ Daryl
DeleteHappy new year! An appetizing dish which I can enjoy with family. I look forward to even more reading enjoyment, hope that I am well enough to travel since I haven't been able to in years. saubleb(at)gmail(dot)com
ReplyDeleteMy agenda is to work on better health and fitness for my daughter and myself. And to fix a lot more casseroles. Try as I might I cannot get my daughter to eat most meats and vegetables individually. She does like casseroles. So? A whole lot more casseroles with dairy free cheeses. And to sit and get some real reading done. deepotter(at)peoplepc(dot)com

Merry Christmas & Happy New Year to you & yours, Daryl/Avery.
ReplyDeleteThis recipe looks delish. I don't know that we have all the ingredients to make it for New Year's, but I do want to try it soon.
We have lived in this house (our forever home?) for 15 months now. Both 2-car garages (yes, 4 cars) are still full of packed boxes. I really do want to get most unpacked and the stuff dealt with. I am too much a sentimentalist to get rid of things I should, so I procrastinate and don't get anything done. THIS YEAR, 2019, I'm determined to do something about that!
AND hubby has spent these 15 months researching genealogy, his & mine. There are some places within a day or so drive that we could drive to, so this next year we want to take some mini-trips.
donna (dot) durnell (at) sbcglobal (dot) net
Donna, you have a packed year ahead! Literally. Enjoy. ~ Daryl

I feel a good med cleanse is coming in 2019!!
