Chicken spinach cheese casserole + #book #giveaway from the author of the Cookbook Nook Mysteries

We all need simple and easy after the holidays. Right?  So, here's something that's just right for a simple meal. Delicious for New Year's Eve, if you like.

I love casseroles, and I especially like them when I can use foods that are already in my refrigerator.
I always have spinach on hand. It goes well in salads, omelets, and so much more. It worked perfectly for this little dish. In addition, I had cooked chicken thighs in my freezer, so that made this dish easy-peasy. I wrap them individually so they're ready to go whenever I need cooked chicken. (*I bake them at 300 degrees for 35-45 minutes, wrapped in foil. Let cool and freeze.)

As for cheese? I always have cheese in the hopper. You can use any cheese that melts well in this dish. Be creative.

Chicken Spinach Cheese Casserole

Serves 2  (double for 4)

2 chicken thighs or one large chicken breast, cubed
1/4 teaspoon garlic powder
1/8 teaspoon white pepper
4 ounces  fresh (1/2 cup cooked) spinach  (*I microwave for 1 minute covered with paper towel)
1 cup cream cheese
1/4 cup chives, chopped
salt and pepper to taste, about ½ teaspoon each
2 tablespoons olive oil
6 ounces (3/4 cup) chicken broth
1/2 cup mozzarella cheese, shredded or diced

Preheat oven to 375 degrees F.

Set chopped chicken in small baking dish. Dust with garlic powder and white pepper.  Top with spinach.

In a small bowl, mix cream cheese, chives, salt and pepper, and olive oil until fairly smooth. Add chicken broth and continue to mix. Pour over the chicken and spinach.

Cover with foil and bake for 15 minutes.

Remove from oven and top with mozzarella cheese.  Bake another 15 minutes, without the foil, until cheese is toasty.

  5. I make casseroles often. It is normally just me for meals, so they work well. Spinach is my go to for salads and add-ins. This will be my New Year's meal, so thank you for the recipe!
    I hope you and your family had a lovely Christmas!
    My plans for the coming year aren't too many to feel stressed about. I vow to use my scrap fabric, frame all of my photos that need it and I have joined Dru Ann's reading challenge in hopes that I organize the books I have read and faithfully write reviews after each. I am also thinking of starting a book blog, but we will see about that one!

  16. A couple of things for 2019: First is to try out a lot more new recipes. I've fallen into a dinner rut, so it's time to find some new things to put in the mix. And secondly is to put aside at least a half-hour each day to read, probably just before bedtime.

  17. Love Cheese. Love Cozy Mysteries. This series looks perfect for me. In 2019 I plan to add some new things into my simple exercise routine of steps and pedalling (on my mini cycle - it's good for my knee). Hope to alternate days of weights, balance exercises, and my weighted hula hoop.   22. Mmm...this looks like a tasty low carb kind of a meal. I just received news that I am just elevated into the Diabetic range so will be working on decreasing carbs and sugar while exercising more in the hopes to get that reading down to normal range, again. Wish me luck.

    This recipe looks delish. I don't know that we have all the ingredients to make it for New Year's, but I do want to try it soon.

    We have lived in this house (our forever home?) for 15 months now. Both 2-car garages (yes, 4 cars) are still full of packed boxes. I really do want to get most unpacked and the stuff dealt with. I am too much a sentimentalist to get rid of things I should, so I procrastinate and don't get anything done. THIS YEAR, 2019, I'm determined to do something about that!
    AND hubby has spent these 15 months researching genealogy, his & mine. There are some places within a day or so drive that we could drive to, so this next year we want to take some mini-trips.

  55. Mine and my doctors goal is to wean me off some of my meds. It has taken 2 years to get my RA levels in the under control area. In the meantime there were supplemental meds being taken and we have discontinued 1 so far with no change in my RA area so we have two more we will slowly decrease to see if they can permanently be eliminated. I feel a good med cleanse is coming in 2019!!

  67. The recipe sounds yummy. I love your Cheese Shop series, and have read the first few in the Cookbook Nook series. My agenda for 2019? A quick trip to warmer climes to get away from Canadian winter, and a long anticipated trip to Turkey in the spring. And then, the big event of my year, our daughter's wedding in June. Whew, sounds pretty busy when I put it all down on paper. I'd better prioritize healthy eating and getting more regular exercise if I'm going to manage all that. Happy New Year to everyone.
