Cookie in a Jar #Recipe + #Giveaway from author @DarylWoodGerber

WREATH BETWEEN THE LINES, the 7th in the Cookbook Nook Mysteries is out! You can read more about the book below.  As most fans know, I include recipes in the book. For fun, I thought I’d share a few recipes on this blog tour. But not today. I'll share those in the weeks to come. How's that for a tease? Heh-heh. Just for tolerating my wicked sense of humor, there's a GIVEAWAY below. 


Some fans ask, do I cook? Yes. I have since I was little. At that time, I was partial to baking. Especially during the holidays.

As I stated above, this particular recipe is NOT in the book, but I made it for the promotional themed boxes I gave away on Facebook, and it was a hit. So easy to make and perfect for a holiday giveaway, if you’re so inclined. Hint: it will not ship well because all the ingredients will mix up, but if you do, don’t worry. The mix will still work.

FYI, this cookie mix comes just short of reaching the top of a 1-quart mason jar. I decorated the top of the jar with fabric, cut into about a 6-7” circle. It covers the inch of open space.  I also added a wad of parchment paper so the mixture wouldn’t move around too much. If you want, increase the M and Ms to fill the top. Extras will be needed to  adorn after the baking process. *Note about using regular flour at end of post.


Mint M and M Gluten-Free Cookie Mix in a Jar

1 ½ cups gluten-free flour (I used sweet rice flour and tapioca starch)
1 teaspoon baking powder
1 /2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon whey powder
1/4 teaspoon xanthan gum
1/3 cup light brown sugar, as packed as you can
1/2 cup granulated sugar
1 cup M and M’s or chocolate chips + more for decorating
1-quart mason jar

ribbon

Assemble in the jar
Layer in the flour, baking powder, baking soda, salt, whey powder, and xanthan gum. Top with brown sugar, then granulated sugar. Do your best to make layers and don’t let them mix.  Top with the M and Ms or if you prefer chocolate chips.  If there’s room, top with either parchment paper or saran wrap to keep mixture in place. (It will be hidden by the felt.)

Seal with the lid and decorate with felt and ribbon.

Recipe to include with the jar:
Pour the contents of the jar into a large bowl – reserving about 1/3 of the M and Ms for decorating after baking.

Add 1/2 cup barely melted (and not hot) unsalted butter, 1 beaten egg, and 2 teaspoons vanilla extract. (If making gluten-free, make sure the extract is gluten-free.) Stir until combined.  Cover and chill for 30 minutes.

Preheat oven to 350 degrees F. 

Remove mixture from refrigerator and form into golf ball-sized portions. Place the balls onto parchment lined baking sheets.  (They do spread.)  Bake for 8-10 minutes until the cookies are lightly brown and set.  If desired, press extra M and Ms on top of each cookie as the M and Ms inside will have melted. (These definitely look prettier.) 

YIELD: 20-24 large cookies

This mixture can be frozen. After forming into balls, wrap tightly in plastic wrap and set in a freezer-style bag. When ready, pull the amount desired from the freezer, let thaw at room temperature, and then bake as above.

*IF YOU WOULD LIKE TO MAKE THESE USING REGULAR FLOUR, THEN SWAP OUT THE GLUTEN-FREE FLOUR AND OMIT THE WHEY POWDER AND XANTHAN GUM.

When Jake himself is poisoned and nearly dies, Jenna knows she’ll have to do whatever it takes to corner the culprit before it’s lights out for Jake . . .

  2. My favorite Christmas gift was a big basket that had an old fashioned hand crank stovetop popcorn maker & about seven small boxes,each one filled with a different variety of popcorn kernels.
    It was gift a from my parents,when I was a teen.
    My favorite gifts to give are homemade goodies,cinnamon rolls,cookies,pies,etc...

  7. One of my favorite gifts was a gift card to Build-a-Bear (even though I was in my fifties). My friend's little girl loved the place so her mom gave me and another dear friend the gift cards so we could all go together and have a fun "girls' day".   11. I love the cover. It wasn't a X-mas gift but the all time best gift was a BRAND NEW KITCHEN from my FIL. Total rehab with new floors, ceiling and walls with all new wiring and appliances. You can't get any better then that.

  13. Your recipes are the best! You posted a peppermint cookie recipe a couple of years ago that is now a family favorite :-). One of my favorites gifts was the year my husband had a military assignment and was away. He recorded all of my favorite movies he could find, an odd mix but I just loved it and although with all the streaming no one watches VHS anymore I still have them - Cary Grant, Planet of the Apes, Star Wars, classic horror films. I was amazed and oh so pleased.

  19. My favorite gift to give was when I gave my husband a set of early 1900’s B&O railroad books that he had been drooling over at a used book store. He was devastated when he visited the store and found them gone, only to realize Christmas morning that I had purchased them. Best surprise gift ever!

  23. I can't think of a favorite gift that I have received ( too hard to choose!), but my very favorite gifts to give are handmade, especially food gifts. Whether it is truffles, fudge, shortbread, fruitcake or something else, I always make sure it is something I know the person loves, but might not make for themselves. One of the special homemade gifts I've given wan't food at all. It was a quilt that I made for our daughter. We had taken her to Maui that year for her 21st birthday, and I made the quilt using cute surfboard fabric, as a highlight for her was learning to surf on that trip.

  27. When I was 12,daddy got a 2nd hand bike from Salvation Army, painted it blue and white and that was my gift from Santa! There are 6 of us kids, I am the oldest we never had much money though daddy worked 2 jobs. That was the best ever, biggest and most meaningful I have ever gotten.

  28. My favorite gift is always books. I can never get enough. My favorite gift to give my husband was the complete set of James Bond movies on Blu-Ray. We still watch the commentary and special features on the discs. We've learned so much about the movies and the actors in them. It's fantastic.
