Because I'm half Italian, I love pasta, but due to my healthy eating quest, I'm always on the lookout for a lighter version. This shrimp and asparagus pasta with pesto fits the bill. Note:
To lessen the cost of this dish you can substitute chicken breast for the
shrimp and broccoli florets for the asparagus.
Ingredients:
8 ounces uncooked pasta (I used elbows, but penne would work
too)
1 pound fresh asparagus, cut into 2-in. pieces
1 tablespoon olive oil
1 tablespoon unsalted butter
1 pound large fresh shrimp, peeled and deveined
1/4 teaspoon ground red pepper
1/4 teaspoon black pepper
1/2 cup halved grape tomatoes
1/4 teaspoon salt
Small jar of pesto
Prepare pasta according to package directions, adding asparagus
during last 5 minutes of cooking. Drain in a colander over a bowl, reserving
3/4 cup cooking liquid.
Heat 1 tablespoon oil and 1 tablespoon butter in a large skillet
over medium-high until butter melts. Sprinkle shrimp with red pepper and 1/4
teaspoon black pepper. Add shrimp to pan and cook 1 to 2 minutes on each side
or until done. Remove shrimp from pan.
Add pasta mixture and reserved 3/4 cup cooking liquid to pan and
cook 1 minute. Stir in jar of pesto, shrimp, grape tomatoes, and 1/4 teaspoon
salt.
