I just came back from a mini vacation. It was delightful and delicious, spending time with little ones with big hugs. But you know how it is when you come home, right? There's so much to do! Mail, laundry, hug the dog, fill the refrigerator.
My refrigerator was empty!! I wanted something sweet. I did have an apple or two in the fruit drawer because they don't go bad as quickly as other fruits. So what did I make? These lovely gluten-free muffins to tide me over as I plowed through my chores.
The topping is what makes them extra special.
In a medium bowl, cream butter and sugar, about 2 minutes. Add 2 eggs and mix well. Add in vanilla. Mix.

If you want to make these using regular flour, swap the flour and omit the xanthan gum. That should do the trick. What do you do first thing after a vacation?
