Tj Jensen and I plan to take to the beach this summer reading
from our TBR list as we lounge on the shores of Paradise Lake. Included on our
reading menu will be my newest beach read, Beaches
in Paradise. While a snack bag is a summertime must for any beach day, my
favorite dessert is actually a dessert that doesn’t do well at the beach, but
is a perfect treat after you get home. I call this yummy summertime treat Fudge
Sundae Pie. Enjoy the recipe below.
Fudge Sundae Pie
Crust:
¼ cup light corn syrup
2 tbs. brown sugar
3 tbs. butter
2½ cups Rice Krispies cereal
Combine corn syrup, brown sugar, and butter in saucepan. Cook over medium heat until it boils. Pour over Rice Krispies. Stir together and then press into buttered pie plate.
Topping:
½ cup peanut butter
½ cup chocolate fudge sauce such as Hershey’s syrup
3 tbs. corn syrup
(Note: I often make extra topping and pile it on thick. It’s up to you.)
Mix together and spread on piecrust. Layer in softened ice cream. I use vanilla, but coffee or chocolate works as well. Top with Hershey’s syrup.
Freeze for 2–3 hours.

Tj Jensen’s life is
thrown into turmoil when a good friend turns up missing after a serious auto
accident. Not only is the driver of the vehicle, Gina Roberts, nowhere to be
found, but she’s the prime suspect in the murder of her passenger, Striker

DeleteI don't often snack when reading, but my favorite is potato chips. It is an awful kind of indulgence in salty, crispy, nibbling that is wickedly satisfying to me.

DeleteIt depends on whether I'm in a sweet or salt mood - ice cream or potato chips. But, if I'm trying to be good, I'll nibble on granola with fruit and salted nuts which covers both.

Peanut butter is a healthy snack so I say go for it.

DeleteRarely snack while reading. Same with a drink. I usually get do involved that I forget I have something. And usually don't care for the distraction either. Just ask my kids. Unfortunately I do like to snack while reading. It is totally mindless. Cheese and crackers are my favorite. Since I read a lot this bad habit is not helping my waistline.
