Joyce Carol Oates Bran Muffins - Guest Terrie Farley Moran, #giveaway

Welcome to our guest, Terrie Farley Moran, who's joining us in anticipation of her new book arriving July 5th, Read to Death! It's the third in the Read 'Em and Eat Mysteries set in sunny and warm Fort Myers, Florida. Here's a taste of what's being served these days at the Read 'Em and Eat Cafe and Bookstore.

On Fort Myers Beach Sassy Cabot and Bridgy Mayfield operate the Read ’Em and Eat Café and Bookstore, where you can always find delicious food, thought-provoking book club meetings and the occasional murder mystery waiting to be solved.

Chef Miguel Guerra is always trying new items and especially likes to experiment with healthy food. Sassy likes to give Miguel’s special dishes bookish names, so I am betting she would call this recipe Joyce Carol Oates Bran Muffins.

Joyce Carol Oates Bran Muffins

1 Cup oat bran
2 Tablespoons oatmeal
1 ½ teaspoons baking powder
1 ½ teaspoons ground cinnamon
2 Tablespoons chopped almonds
½ Cup milk
1 egg
2 Tbsp honey
1 Apple cored and chopped

Preheat oven to 425degrees. Place muffin liners in eight muffin cups of a twelve cup muffin tin.

Mix oat bran, oatmeal, baking powder, and cinnamon in a bowl. Stir in almonds.

In a separate bowl, beat egg, add milk, honey and chopped apple.

Use a spoon back to make a well in dry ingredients and add milk mixture. Stir until just moistened.

Spoon mixture into lined muffin cups. Put a tablespoon of water in the four empty muffin cups to prevent burning.

Bake for 15 minutes. Test with toothpick. If not done bake another 3-5 minutes.

Enjoy with your favorite cup of tea!

To celebrate the July 5, 2016 release of the next book in the series, Read to Death, Terrie is giving away a signed copy of her most recent book, Caught Read-Handed. For a chance to win, leave a comment by midnight tomorrow night, Monday, May 23rd.

  48. Hi All, there have been several comments regarding how easy this recipe looks--and believe me it is very easy. The most complicated part is chopping the apple. I am so glad there is such great interest in both the muffins and the Read 'Em and Eat books. Just a reminder you have until midnight tonight to enter.
