Oh my, you're really tempting us with the pumpkin and cream cheese, Cleo! I remember my stepmother making a version of this that included dried cherries in the batter. I was always sorry I hadn't gotten the recipe--so thanks! xo
ReplyDeleteThanks for showing how to make this cake without the mixer. I always feel like I have to haul the KitchenAid out to make something. I also appreciate the size, since there are only two of us. Definitely sounds like a winner!
ReplyDeleteOne of my biggest pet peeves is recipes that call for partial amounts of canned ingredients. Sadly, I am not clever enough to figure out what to do with the remainder. Thank you so much for pairing two recipes that use up everything! I was planning to try the fettuccine recipe, and now I can do so secure in the knowledge that I will not have a half-empty can of pumpkin moldering away in the back of my fridge because I can also make this delicious cake!

You and I both know that I could do a face plant into that cream cheese frosting! Lo and behold I would be so so sick afterward :-(. I am so happy to have my very own dairy free recipe to turn to this pumpkin season! Being the big baby that I am I do feel sorry for myself nt being able to have casein any longer...no pumpkin pie, no cheesecake...no whipped cream. But Hark...the angels do sing ;-) As I delve more into dairy free baking (with your most able and patient assistance) I am finding there are many wodnerful alternatives.
