CHILI @vmburns #recipe

 VMVBURNS: I live in Northern Georgia, which doesn't get very cold in the winter, but this year was different. This year, it was cold. Plus, I spent a weekend in NY right when Winter Storm Fern hit. Yeah, it was awful. I'm still not completely recovered. Today, it's dreary and overcast, so I wanted chili.

I've posted chili recipes before (I have several).I am in search of the perfect chili recipe. This one was good, but my search isn't over. 



CHILI


  • INGREDIENTS


  • 2 lbs Ground Beef
  • 2 large Onions, chopped
  • 2 cloves Garlic, minced
  • 2 Bell peppers, chopped
  • 2 Teaspoons Kosher salt
  • 1 Teaspoon Black pepper
  • 2 Tablespoons Chili powder
  • 1 Tablespoon Ground cumin
  • 1 Teaspoon Smoked paprika
  • 1/2 Teaspoon Cayenne pepper (optional)
  • 2 Cups Beef broth
  • 2 Tablespoons Tomato paste
  • 1 28 oz Can Canned diced tomatoes
  • 2 (15 oz) Cans Canned kidney beans, drained and rinced
  • 1 (15 oz) Can Black beans, drained and rinsed

  • INSTRUCTIONS

  1. SautƩ onions and peppers in olive oil until soft. Stir in garlic and cook for 1 minute.
  2. Add ground beef and cook until browned. 

  3. Stir in all spices to toast them
  4. Stir in tomato paste, then add diced tomatoes and beef broth.
  5. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.

  6. Add the drained and rinsed beans and simmer uncovered for another 10-15 minutes to thicken.

  7. Serve hot, garnished with fresh cilantro and your favorite toppings.

  1. Thank you for the CHIILI recipe. It does sound yummy.
    I'm usually the odd duck when it comes to chili. I fondly remember the first Frito pie I had years ago. You know at a school function where they split the side of a little package of Fritos, put a big scoop of chili on top and then added grated cheese and lettuce. I forgo the little package, but love chili topped with Fritos and grated cheddar cheese. Then so the lettuce doesn't get soggy, I have a small bowl of pinched up lettuce to the side to spread some on top as each layer is eaten. To me, that's the best way to top chili - and bring back childhood memories making it doubly good.

    Can't wait for the opportunity to read MURDER FROM A TO Z, which is most definitely on my gotta read list.

  5. I'm with Kay, bring on the Fritos and cheese, maybe a few chopped fresh tomatoes to top that chili. Nothing quite like it! That said, Texas style is my favorite as beans just don't like my digestive system. Hope spring shows up soon in your neck of the woods!
