MADDIE DAY here with a yummy pre-trick-or-treating snack. When my sons were much younger, I always tried to get some kind of healthy, non-sweet early supper into them before they ventured out to collect massive amounts of candy.
These muffins aren't too sweet, are fast to throw together, and can be eaten on the run. Plus, pumpkins are the essence of Halloween, aren't they?
Pumpkin Muffins
Ingredients

Add other wet ingredients and stir in with a fork until just mixed.
Spoon into the prepared muffin tin. Bake about 20 minutes until tops are golden brown. Cool on a wire rack, then remove from pan.
Enjoy with your breakfast or as an afternoon snack!

ReplyDeleteOne of my favorite muffins is one called All-In-One Breakfast Muffin. It's delicious and in my opinion is delicious any time - not only breakfast. It's got it all - chopping onions, chopped bell pepper, crumbled bacon, grated cheddar cheese - and makes for literally a meal in a muffin.
LOVED "Deadly Crush" so I'm not entering the giveaway. I want someone else to enjoy this fabulous book as much as I did.

ReplyDeleteBlueberry or chocolate would probably be my top two but I love any flavor of muffin. These sound excellent, I'll have to try them. I'd probably add a dot of cream cheese icing to the top or inside- I just had one with a cream filling and it was great.

DeleteGrandma made pumpkin bread, often using tin cans to bake small round loaves. So good! I've made cranberry or applesauce. When I could still have bananas, that was my favorite, with chocolate chips and pecans. ;-). The book is wonderful! I don't need to win it. ;-) -- Storyteller Mary
