Easy "Homemade" Tomato Soup #recipe by @LeslieKarst

 

The word “homemade” is in quotes here, because rather than cooked fresh tomatoes, this recipe calls for a jar of tomato pasta sauce—hence the “easy” part of the title. But it tastes homemade, because of all the other (also easy) ingredients used—such as frozen vegetables (though do feel free to cook your own). 

 



Easy “Homemade” Tomato Soup

(serves 2-4)


Ingredients


1 large jar tomato pasta sauce, preferably “chunky”

½ cup chicken, beef, or vegetable stock

½ cup whole milk (or cream, if you prefer a richer soup)

1 cup frozen vegetables (such as broccoli and carrots), coarsely chopped

¼ teaspoon garam masala (or more, to taste)

salt and black pepper, to taste

grated parmesan cheese, for garnish

yogurt or sour cream, for garnish

 



Directions


Dump the pasta sauce into a medium sauce pan, then add the stock, milk, vegetables, and garam masala. 

 



Bring to a boil over medium heat, then turn to low and simmer for 5-10 minutes, stirring occasionally, to reduce a bit. 

 


Season with salt and pepper to taste, the ladle into bowls and garnish with the cheese and a dollop of yogurt or sour cream.  (See photo at top.)

Love tomato soup and grilled cheese sandwich combo any day...especially these days here in SoCal, where we are still in late winter instead of Spring...I believe we will 'spring' into summer and skip Spring this year.
